    Hi

I have just returned from my second trip to Istanbul, which I thoroughly enjoyed. One night, I had a sort of chapati like pancake, with a spicy vegetarian filling of potato, spinach and cheese which was cooked by one of the ladies sitting in the front of the cafe. It was lovely and I would like to try making it, but can't remember the name. Any chance of a recipe?

I think your website is really great, given me lots of ideas to keep the memories of Istanbul alive!

I absolutely love your website! I'm addicted to the gözleme:) I make them every day now:)
I was wondering if u could tell me what the recipe for the yufka dough is. I want to try to make it on my own (even though I imagine that it’s going to be hard). And for the Borek recipes where it indicates that phyllo should be used, if I use the yufka dough ,that I hopefully I’ll be able to make, will I be using 1 sheet instead of the 2 sheets of phyllo (for the layering).
Thanks so much for your help:)

    ReplyDelete
  14. Hi, Thank you:)
You can use Gozleme dough to make yufka. But I give you another recipe to make Yufka and Cig Borek:)
    2 cups milk
    750 gr all purpose flour
    Salt
    Mix and knead them all.
I am not sure whether you know the size of Turkish yufka. We use 3 Turkish yufkas to make a regular size Borek. So it depends on how big the yufka will be... also it depends on how thin they will be!
