hi binnur, i think your recipes are fantastic. I have recently bought some sprats and was wondering what was the best way to cook them?

Hi,
Thank you:) You can cook with sauce like Haddock Fillets with Sauce or fry like Halibut with Lemon Butter. In each case it will be tasty:)

Thank you for the super recipes Binnur! I lived in northern Turkey for several years and my favorite dish was a fish one. I think it was called "bulama". Could you please post that recipe if you have it? Tessekur ederim!

Hi Binnur,

When I was in Instanbul I bought roasted, stuffed mussels. I bought them on the street, next to the water. They were stuffed with rice and currants (I think), and we squeezed lemon juice on them. They were completely succulent. Do you have the recipe?

Hey Binnur,
i bought a heap of spices from the markets in istanbul. Do you know any good recipes/uses for turkish lemon salt?

thanks heaps,

Enrique.

Hi Enrique,
We mostly use Turkish lemon salt to make pickles or jam instead of lemon juice to prevent the crystallization at home. It can be also used for food industry.

Merhaba,

Had a question about Turkish cuisine so I thought I would ask the expert :)

Is there an authentic dish called midye pilav? It is like midye dolmasi but instead the mussels are removed from their shells and added to the rice mixture.

I have tried this before and it was lovely, just wanted to know how authentic it is or whether it is a spin on a classic.

Thanks!

Hi Binnur,
While in Istanbul, we had a pancake filled with shrimp, vegetables and tomato sauce with melted cheese on top as a starter. It was really great!!! Do you know what it is called in Turkish and do you have a recipe for that?

Thank you!

Merhaba!
I just bought some iskorpit (black scorpion fish) - possibly the *ugliest* fish I've ever seen. The balikci said that it's good for soup: anything else I can do with it? Baked? Grilled? Pan-fried?

At 5:09 PM, Blogger Binnur said...

Merhaba Doris,
Actually, the soup made with Iskorpit is delicious, however, iskorpit is not good to grill or fry.

You can also make a salad.... Fish Salad, here;
http://english.turkishcookbook.com/2007/08/fish-salad.html

or you can make Bugulama with it. I've already posted two different bugulama recipes for it, here Steamed Haddock
http://english.turkishcookbook.com/2010/05/steamed-haddock.html
and
Sea Bass Poached in Parchment Paper
http://english.turkishcookbook.com/2008/04/sea-bass-poached-in-parchment-paper.html

You should also know that the dorsal spines of iskorpit are poisonous. Therefore, it should be cleaned out by the fisherman.

At 5:28 AM, Blogger Doris said...

Hi Binnur,

The iskorpit did indeed make a splendid soup (and yes, I let the balikci clean it for me).

My new fish of the day: salpa. In googling I'm not turning up any recipes, just a warning that it allegedly can have hallucinogenic properties (eep!). I don't really suppose I have anything to worry about, but can you suggest how best to prepare it?

Doris

Hi Doris,
I've not heard of such a fish name before. Does it have another name?
