When I was in Instanbul I bought roasted, stuffed mussels. I bought them on the street, next to the water. They were stuffed with rice and currants (I think), and we squeezed lemon juice on them. They were completely succulent. Do you have the recipe?

We mostly use Turkish lemon salt to make pickles or jam instead of lemon juice to prevent the crystallization at home. It can be also used for food industry.

Is there an authentic dish called midye pilav? It is like midye dolmasi but instead the mussels are removed from their shells and added to the rice mixture.
I have tried this before and it was lovely, just wanted to know how authentic it is or whether it is a spin on a classic.

I just bought some iskorpit (black scorpion fish) - possibly the *ugliest* fish I've ever seen. The balikci said that it's good for soup: anything else I can do with it? Baked? Grilled? Pan-fried?

Actually, the soup made with Iskorpit is delicious, however, iskorpit is not good to grill or fry.

You should also know that the dorsal spines of iskorpit are poisonous. Therefore, it should be cleaned out by the fisherman.

The iskorpit did indeed make a splendid soup (and yes, I let the balikci clean it for me).
My new fish of the day: salpa. In googling I'm not turning up any recipes, just a warning that it allegedly can have hallucinogenic properties (eep!). I don't really suppose I have anything to worry about, but can you suggest how best to prepare it?
