Hi. I'm so glad i've found this site now as my partner is turkish and i'd really like to be able to cook some authentic meals for him. I'm trying to find a recipe for mendane borek (i'm not sure this is spelt right!) and also different types of kofte. If you can help that would be great.. Thanks

Hi,
Thank you:) Merdane means roller in English. It's been used to make a dough (yufka). We make Borek with yufka so I've already posted a few Borek recipes. Please check Turkish Pastry Recipes section to find which Borek you would like to make, here is the address;

just wanted to say you really dont know what a god send this site is, im an english woman married to a very fusy turkish man and although i can cook i had run out of things to do my husband will think he is in paradise already thankyou so much xxxxxxxxxxxxxxxxx

Merhaba Fatma,
Kuru erik ile marmelat yapabiliırsın. Erikleri, uzerini gececek kadar su ile yumusayana kadar pisir. Kevgirden gecirdikten sonra, ayni miktarda seker ile kivamini alana kadar pisir. Ocagin altini kapamadan bir kac dakika once limon suyu ilave et. Afiyet olsun.
