I am a Canadian who has been living in Turkey for nearly five years, and although I can easily access all of these lovely foods in restaurants it is great to be able to actually make them at home. Do you have a recipe for ezogelin corbasi? I love it and would be delighted to be able to come home to it at night in winter ;-)

What you are asking about might be Wedding Soup. The ingredients of
this soup varies from region to region. It contains chickpeas,
lentils, black eyed peas and lima beans in Aegean Region. I will post

Canadian, here's your ezegelin corbasi soup:
Ingredients

1 cup red lentil
6-7 cups water
1/2 cup fine bulgur
salt to taste
1 middle size onion
2 table spoons tomato paste
1/2 tea spoon hot pepper sauce or paste
2 table spoons olive oil
1 tea spoon red pepper flakes
1 tea spoon dried peppermint flakes

Directions

Peel, wash and mince the onion. Then place it in a soup pot. Add olive oil and saute the onion.
Wash red lentil and add it to the pot together with bulgur, tomatoe paste, pepper sauce and salt. Cook them until lentil and bulgur are soft. Let it boil few minutes and then remove pot from the heat.
Pour soup in plates and decorate top with red pepper and peppermint flakes. Serve it hot.
It is for four servings.

One of my favorite Turkish dishes is iskembe corbasi (tripe soup). I have made it a few different ways, and I would love to get your recipe. (People who turn up their noses at the mere mention of "tripe" are missing out!)

Hi again Binnur,

I have posted a few comments before about the peppers and the lamb.

I also wanted to know about a soup.

My friends babbanne was making a soup. I saw little bits of her making it but not alot. What i saw was first she was boiling water then after that she added some powder or paste and that turned it like a light red orange colour. I know that it was a heart warming soup and was good in the winter.

I dont think that it was Tarhana or Ezogelin.

really need a name for this soup. There is a large verity of Turkish
dishes. Every region of Turkey has their own dishes comes with their
ingredients. It is very hard to tell the name of dish with a little
description:)

Hi Sam,
I will post Arpa Sehriyeli Corba for you:) Bulgur is a grain, which is in a different size. It depends on it's size so you can make pilaf or kofte or some other dishes. I buy Bulgur from a Turkish Grocery, but it is also possible to find them from a local super market in a box. Also, tulumba.com sells them. I posted a few different types of Bulgur Pilaf, please take a look at the pictures to get some ideas about it:)

I Found that my friends babbanne was making Tarhana. I made tarhana a while ago but ended up throwing it away. I did that beacuse as i was drying it out, it bacame like a hard dark yellow colour and the middle wasnt drying out. Also when the dough was making in the bowl, it beacame a light to dark yellow on to but when i needed it, it was fine. I really want to try Tarhana. Do you know where i could buy it from or please tell me what i did wrong.

Also i would like to thank you for your site. It is a fantastic site. It happens to be my favourite site.

The next thing i hope to make will be Lachamcun.

Thank you:) I have already posted Tarhana recipe, if you like, try it:) Seems to me, waiting time was too long which spoiled the dough. When you try to dry it out, make small pieces and turn them under the sun occasionally. Or put the dough in the small Ziploc bags, keep them in the freezer. As I mentioned earlier, tulumba.com has so many variety of Turkish food, you can find Tarhana Soup there as well:)

Thankyou for the recipes- and for making them so available! I dreamed the other night of a Turkish soup that I used to eat in a restaurant in Sydney- I think it contained wheat and lemon juice, somehow... (!). It was pale, smooth, quite weak and lemony (and vegetarian). Does this ring a bell? I'd love the recipe if you know of it!

Icinde hamur tanecikleri, arpa veya tel sehriye veya eriste veya makarna olan corbalarimiz var. Icinde baska ne var, sebze var mi? yoksa yalniz hamur mu var? un corbasi gibi. Daha fazla bilgi verebilirsen yardimci olmaya calisirim:) Corbanin hangi yoreye ait oldugunu biliyormusun?

I have read some recipe of Pacha corbasi on the internet but it doesn't looks quite like the one i tasted in the restaurant, the one I had was very creamy , seemd like they put yoghurt in it, the soup appears to be in white colour and not clear soup. I have a question which I am looking for an answer for last 6 months :) but I have not found the answer. I visited Finland sometime back and that was my first time I tried turkish food. It was great. The recipe that I am looking for is for a soup. They served us a soup which seems to have orange juice and vanilla. I crave for it but I do not know how to cook that. If you can guide me that will be very nice of you.

I don't think it is a soup. We don't have orange soup in Turkish cuisine. It may be dessert. I've already posted a similar dessert which is called Sultan's Jello.

when my daughter was just 10 months,w e came to turkey to visit my parent-in-law, there when she tried just one last spoon of my soup kele pacha, she startyed to cry and want it so much that we had to order another plate of it. You ask for two different soups:) One is Pacha Soup, the other one is Kelle Soup. It's very hard to find sheep's trotter (Pacha) here. If I can find it I'll cook it and post for you:)

I lived in Adana for 11 years and STILL dearly miss the wonderful Turkish food! My only question though, is at lunch time my dad and i would just stop in those little Cafe type restaurants where they have all the food just ready for you to choose and pick out; and one of my favorites was a Red soup that i only remember calling Fasulye, and it had white kidney beans in it, w/ a few chunks of meat in it.. i think... do you have a recipe for that or what it is called? it was a type of tomato soup.. I always added rice to it and ate it w/ ekmek! thanks so much I'd greatly appreciate you getting back to me! :)

When I'm in Turkey, I always eat the standart Çorba in cheap cafeterias, with a reddish-orange colour, I think it's made out of mashed chickpeas and it's NOT a wedding soup, as I've eaten it in alomst every region of Turkey, in standart cafes, so can you tell me which of those recipes stand for my favorite Çorba? =D

First at all congratulations for your blog and your cookbook!!.

I couldn't find any webside in my language (Spanish) with good plenty traditional Turkish recipes so you can't imagine how happy i was when i found your blog!!.

My boyfriend (and future husband) is Turkish, from Kușadasɩ, he'll move to Spain to be able to be together after years living in the distance...(too hard)so I want him to feel like at home when he is far away from his loved country so I'm learning to cook Turkish food (wish he won't miss too much his mother's food...haha). He loves soups and I found lots of them in your blog!!, how nice!!. And he is lucky i love to cook!.

I'm happy Turkish and Spanish food are so similar, we use the same ingredients...and our loved olive oil. When I was in Turkey everybody asked me all the time if i liked the food, they were very surprised when i told them we use the same ingredients and even some recipes are quite similar.

You can make pacha soup with cow tongue or sheeps or you can make it with lamb or cows head.. sounds weird but the flavourers really work very well

Elinize ve kaleminize sağlık!

Kelle paça is the name of one soup. There is a Corbacı in Kadıköy that sells it. But it is more common in Iran than in Turkey, so Alinjonok may have better luck reading Persian cooking sites to find it. Kelle means head in Farsi, and I think paça is foot or knee.

Do you have a recipe for the traditional food lebeni that one can find in Urfa and Harran? I am not sure if it is considered a soup, but it is souplike, so I'm asking about it here.

It was sort of a transparent creamy soup with shredded carrot in it.. I'm dying to know what its called! Thank you for your help and recipes again!!

My husband's parents live near Fethiye Mula. His mother would make this soup which had white northern beans a red sauce and meat in it. I am having trouble finding a recipe. Do you know this soup?

I've been trying to find a recipe for the white beans in a red sauce served with rice (I believe it's called Kuru Fasulye).I ate so much of this last year in Turkey and have been trying to find an authentic recipe ever since! I just found your blog and think I am in heaven.

Many years ago I lived next door to the Otel Tunali and the restaurant there had the best Borscht soup I have ever had in my life. I have lived in Russia and their Borscht can not hold a candle to the Turkish version. Hence, do you have a recipe you may share?

I am in search of a recipe my Grandmother used to make. It is a soup that has a broth/yogurt base with sauteed onions. There are farina dumplings that she used to wrap in bean leaves, and she would add prunes to the soup as well. It had a sweet and sour flavor. I was hoping you have a recipe to share with me? Thank you so much!

Thank you! It is called "Kiraz yaprağı sarması - from Malatya"

The leaves to roll can be bean or sour cherry or quince or even mulberry. If I get a chance to obtain the leaves, I am going to make it and post for you. I think your grandmother used farina as a filling. The cracked wheat can be used as well:)

Yes! This sounds very similar, but there are prunes in the soup as well. She did use farina as a filling in the beans-leaf dolmas. Is there a soup that is similar to this description as well?Thank you so much for helping me find this reipe. It is so important to me to honor her memory by cooking her favorite dishes.

Hi Linda,
Your grandmother seems to have used prunes instead of the plum syrup/vinaigrette. Dried fruits as well as fresh ones are used a lot in classic Turkish cuisine. This is the only soup I know that matches your recipe:)
