Do you have a recipe for the sauce in which to marinate kebab meat in before roasting on a spit? Also the awesome yogurt/garlic sauce that is served on doner kebabs? Thanks, Justin jdwpiano82@hotmail.com

Mash garlic with salt and mix with yogurt. We use yogurt and garlic in

Hi! I recently ate a fabulous salad/side dish at two different turkish restaurants and both were listed simply as "bean salad" or "roasted bean salad". They varied a bit from each other but both contained beans (one red beans the other white cannelini beans I believe). They were both served cold. I found your recipe on the site for the bean salad but the one I ate did not contain egg, onion, tomatoes. And I do not remember tasting any lemon flavoring. Any assistance on what this dish I had might be, I would greatly appreciate! Cara@veronyc.com

Turkish Cuisine. At least you could give me the other ingredients, it can't be only beans...was tahini in it?

Hi Binnur,

I have to say how much I've enjoyed your site, found it a couple of days ago while looking for a pide recipe.

Two questions I would like to ask you, first one being a long shot but here it goes, at a resturant we had spoon salad which was basically finely chopped salad with paprika flakes and I presumed lemon and oil but when I tried to make it I failed totally, any hints? No2 at the same place we had bread like balloon bread but the size of a plate, would this be the same bread as the big long one and have you posted the recipe for it?
Have to add lentil soup was a big hit, thanks

Thank you:) For the dressing, you may use pomegranate paste or sumac instead of lemon juice.
I haven't posted the balloon bread recipe yet:)
Basically, all the breads are made of yeast, flour and water.
Baking techniques or styles can be different.

I am new to your delicious site, but from now on will be a regular visitor.
I was recently in Turkey and my Mother in law made bread and broke it into little peices and placed into a large bowl, she then added garlic and yogurt all over the bread but im not certain on quite how she did this, this appetizer was very nice and i forgot to get the recipe from her. I would really like to have a try at this recipe, so is there any chance you can help me?

I am absolutely hooked on an appetizer that I get at a local Turkish restaurant, they call it Havuc Kavurmasi. They say it contains cooked ground carrots, olive oil, garlic and yogurt.
I would love to have the recipe to try to make this at home. (I am spending way too much on this a month.)

I was very fortunate to have Turkish Neighbours in Denmark and sometimes they invited me over to eat with them, They made a very yummy salad - sort of iceberg salad cut very fine but the salad had like a salty taste, must be the dressing - maybe lemon juice & salt but it was a very fresh and filling salad that could be eaten by it self, I would like to know if you can help me with the recipe.

Do you have a recipe for Dana Sogush. I had this salad last night in a restaurant and it was terrific. It had corriander, salad leaves, beef strips, red chilli, cucumber, tomatoes, red onion all in a lemon and olive oil dressing. I think! I guess there was other ingredients and the balance will be important. I would love to recreate it. Thanks, Janey

I've been enjoying your website and your book for some time now. Thank you for posting all these wonderful recipes. I was wondering if you are familiar with “ayran kofte” recipe. My mother in law made kofte I think from bulgur and soaked them in yoghurt. Also, I was hoping to make some Turkish style tomato paste at home. Would you have any suggestion how to do this (I was hoping to dry tomatoes in the oven instead of sun). Thank you.

i was at a Turkish restaurant and had a meal which came with a simple salad with a spice on it i asked the waiter what the spice was but he didn't seem to know its name but told me that it was a Turkish spice specially for salad so just wondered if you have any suggestions to what the spice could have been could have been

i just needed to ask about a dish i ate in turkey on my last vacation ;it was like wheat with a sauce like the kishk we do in egypt which is flour yoghurt and soup until they get abit thick but i think it is something else (contains other ingredients)it awas served as a side dish .do you know what it is and how to prepare it ?

If it is soup, it may be Tarhana Soup (posted under the Soups section) made with red pepper, tomato, onion, flour, yeast and etc. But when you say it was a side dish, I am not sure about it:)

When I lived in London, I frewuently ate doner kebab with white cabbage salad on top. The cabbage seemed softer somehow, not completely crunchy as it is whn raw. Do you have any idea how they did this? I have tried cooking the cabbage a couple of minutes, but that wasn't anything like it, and I tried salting it. Maybe I didn't leave the salt on long enough? Any suggestions welcome! Thanks
