Mixed Vegetables with Beef
(Turlu)
1 medium size eggplant, cut bite size
3 medium size white potatoes, cut in pieces
1 small zucchini, in chunks
1 medium size onion, sliced
2 garlic cloves, sliced
3 fresh green onions, cut in pieces
1 cubanelle pepper, chopped
1 large tomato or 2 tbsp crushed tomato
1/4 cup extra virgin olive oil
4-5 tbsp medium ground beef or 1/2 cup cube beef
Salt
Black pepper
Soak the eggplant pieces in water with salt for 15 minutes. After taking them out, squeeze the eggplants to get rid of the water inside.
Cook the ground beef or cube beef in a pot. Then wash and cut all the ingredients above. Add in the potatoes, onion, salt and pepper and a cup of water. Cook for about 15 minutes on medium heat. Add the rest of the ingredients and continue cooking for another 20-25 minutes. If necessary, add more hot water.
Serve as a main dish with rice on the side (for example, Rice with Orzo).
