Shepherd's Salad

(Çoban Salatası)

Shepherd's Salad
1/2 cup cucumber, diced
2 tomatoes, diced
1 cubanelle pepper, chopped
1/4 red onion, sliced
1/4 cup fresh mint, chopped

Dressing:
2-3 tbsp extra virgin olive oil
50 ml feta cheese, crumbled
Salt
Pepper

Place all the vegetables in a medium size salad bowl. Season with salt and pepper to liking. Add the feta cheese, lemon juice and olive oil. Don't add any other dressings!

This salad goes very well with lamb dishes.

I love this receipe! I have made it in a different way before but this is the best I have tasted. My children love it, and they can't get enough of it.

This recipe is the best. It must be the mint instead of parsley others suggest.
I do wish the posted sites would tell how many the recipe serves. Suggestion: Serves ???? many.

It depends how much you serve and what else is served with it. But I
would say 2-3 servings. The most of the recipes that I've posted say "how many servings they are" :)

Binnur,
When we were in Turkey, we had a great neighbor that spoke english and had us over alot. She made a salad where she just added lemon and then sprinkled something that looked like paparika(in color). Do you know what this spice would be. I was thinking that it was sumac. Would I be correct?

I don't think it's sumac because sumac gives sourness like lemon juice. Probably it was Turkish paprika or Turkish red pepper:)

This salad is amazing. The cubanelle pepper adds just the right amount of heat, at least for my tastes. Very refreshing and, as the recipe states, it was a good complement to the lamb dish I made.
