Leek in Olive Oil
(Zeytinyagli Pirasa)
1 bunch of leeks, washed and cut, in chunks
1 medium sized carrot, washed and chopped, bite size
75 ml extra virgin olive oil (half for cooking, half for after)
2 tbsp rice, washed
Juice from half a lemon
1 cup water
1 tbsp sugar
Salt
Place all the ingredients except half of the olive oil in a medium-sized pot. If needed, you can add more water. Cover the lid halfway and cook for about 30 minutes on medium-low heat. After cooking, put on a serving dish and pour the remaining olive oil over top. Let cool for a while, then refrigerate. Serve the dish at room temperature or chilled.
* This is a vegetarian dish.

This is my favourite dish. I usually add the onions in first , then the carrots and after a few minutes add the Leeks. I let the leeks sweat it out a little first and then add the water. Again this is just a preference, but what ever you do make this and eat it with a nice piece of french baguette. You will be sure to b in heaven.
I forgot my aunt like to make this with the egg mixture which creates a creamy version ( terbiyeli) , but I like it without.

Made this the other night, and it was delicious! It even got the nod of approval from my turkish boyfriend... I've also made a variation which included chicken, which was also really good. Will be sure to visit this site again!

When I was living in Sariyer for a year and half back in 1984-1986, I noticed a lot of leeks being sold in the local market. We use leek mainly in soups. I looked through your soup recipes and didn't find any. Is there any traditional soup recipe in Turkish cuisine that uses leek?

Sure, we use leek in vegetable soup. The choice of the ingredients is seasonal or depends on what one likes:)

This is really delicious Binnur! I have never liked vegetables much, and I hate it when they squeak when you chew them. These were simply succulent. You could turn me into a veggie lover in no time with recipes like this!
