Stuffed Peppers and Tomatoes
(Domates, Biber Dolmasi)
Main ingredients:
6 small cubanelle peppers
(or 4 small Hungarian peppers)
2 large tomatoes
1 tbsp crushed tomato, canned
3 tbsp extra virgin olive oil
2 cups water
Filling:
225 gr medium ground beef
1/4 cup rice, washed
4 fresh onions, chopped
1/4 cup parsley, chopped
2 tbsp extra virgin olive oil
3 tbsp water
Salt
Pepper
Cut off the tops of the peppers and tomatoes using a small knife, but don't throw them away as you will put them back on after you put in the filling (see picture). Clean out the seeds inside the peppers. Then spoon out the inside of the tomatoes, this will be added to the filling.
Mix all the filling ingredients (including the inside of the tomatoes) with a tablespoon. Stuff the peppers and the tomatoes with a teaspoon, but don't overdo it. Leave some room at the top. While filling the peppers, don't push the filling in, instead tap the peppers vertically on the counter. Then cover the peppers and tomatoes with the tops you cut off earlier.
Place the peppers sideways at the bottom of a large pot. Then put the tomatoes on top. This is because the tomatoes cook faster and thus will fall apart if not placed this way. Now, pour the rest of the main ingredients over (water, crushed tomato and olive oil). Cook on medium-high for about 30 minutes with the lid half covered.

I am so happy that I found this website as although born in Istanbul to Turkish parents my turkish is not good enough to decipher my turkish cookbooks anymore and the once a year visit to Turkey is not enough to keep up a a good vocabulary....I am looking at your Biber Domasi recipe and can't wait to start cooking - but - what do you mean when you say 1 Tbsp crushed Tomatoe?

Thank you. Crushed tomato should be from a can. You can find it at the
grocery store. I just added it thank you very much for the warning:)

No it is not:) Crushed tomato is not a paste it is watery. You can find it at super markets in can. If you like you may use tomato paste too:)

Will the meat still be pink or does that mean it needs to cook longer? Love your website and all the recipes!! Yummy!

If the meat is pink it needs more cooking. But normally 30 minutes should be enough for ground beef. Crushed tomato also gives the pinkish colour:)

My husband brough me those stuffed peppers few days ago cooked by his friend wife. She is Turkish and doesnt speak English very well so I actually can't ask her in person but... how come the meat and rice get cooked so well in that less liquid? Once I ate those I though u actually cook all the stuffing first and then u just fill up peppers with it and put them in oven fr few minutes but it looks like its other way around! Do u cook it in a deep pan so it's slightly submerged in tomatoes and water mix? Or in overproof dish with lid? Loved the dish and would like to cook it this thursday!!! thank u anyway :)
