Turkish Hamburger
(Kofte)
500 gr regular ground beef
1/4 cup breadcrumbs
1 egg
1 onion, grated
1/4 cup fresh parsley, chopped
1/2 tsp cumin
1-2 garlic cloves, minced
Salt
Pepper
Mix all the ingredients using your hands. Make a ball and throw into the bowl 4-5 times. It is a very old technique to bring all the ingredients together:) Give a round, hamburger shape as shown in the picture. Grill or fry in the pan with some sunflower oil. Makes 8 medium-sized kofte. Try serving with french fries and/or Piyaz.

The traditonal kofte can be enhanced with a few spices like a pinch of cumin, of course we know that there are too many variations to mention here.

garlic clove which gives it a very nice taste:)

It is home made Turkish Bread, I did not post it yet. The recipe is on the waiting list:) I suggest to you, to have French Bread which is more close to Turkish Bread:)
My husband made Turkish Burgers with all natural ground beef last night -- WOW -- I'm not a big meat eater, but I loved these burgers. I think it was the garlic, or maybe the cumin -- all combined make a perfect buger!

Merhaba Binnur hanim, I've been following your blog for sometime and I love it so much! I was wondering for the kofte, is it okay to use bulgur wheat instead of breadcrumbs? I've seen some recipes (not Turkish) that add bulgur wheat to ground meat for hamburgers. Again, cok tesekkur ederim!

Thank you:) Sure, you can use fine bulgur instead of bread crumbs. There is also Kofte with bulgur in Turkish cuisine. I am going to post it in the future:)

When I make kofte whether in tomato sauce in the oven with patates or kuru plain kofte fried or in the oven they always come out like lastik top gibi....
I put egg, rende onion (to keep kofte recipe moist, bread crumb, parsley, tuz ve biber, ve crushed garlic...cumin hic sevemezler benim aile onda sora I broil in the oven or fry in a pan with vegetable yag la (is that type of yag ok to fry in?)
Still benim kofte lastik sert top gibi chikiyor, neden? What am I doing wrong here, I can never get this recipe to taste moist ve yumushak? I'm not interested in the bulgur kofte recipe to make it yumushak but wondering why this specific recipe never works out for me, unless benim aile eats this right away from the frying pan even still it feels tough & hard no matter how careful I cook them & stay on top of the frying pan....

Kofte yaparken orta yagli kiyma tercih edebilirsin. Veya bread crumbs yerine Turk (Fransiz veya Italyan da olabilir) ekmek diliminin yalnizca ic kismini, ufaladiktan sonra su ile islatabilirsin. Veya kofteler fazla pisiyor....Bunlarin haricinde aklima pek bir sey gelmiyor:)

Hi Binnur, out of many kinds of kofte, is this kind of kofte the same kind with the Sultanahmet kofte? I wonder what makes the sultanahmet kofte (and some other) taste very chewy and tasty (and not too solid-meat taste). Is there anything specific to add? Cok tesekkur ederim...

I also love these little, soft, delicious grilled Sultanahmet kofte:) Actually it is a very simple kofte..meat, onion, bread and salt..that's it:)
The taste of the dishes are absolutely better in Türkiye because of the freshness of the ingredients. Even with the right ingredients it is almost impossible to have the same taste out of my country. The cooks and butchers are also very talented!
