Eggs on Yogurt
(Çılbır)
1 cup plain Turkish yogurt, at room temperature
1-2 clove garlic, mashed with salt
2 eggs
3 cups water
1 tbsp vinegar
1 tbsp salt
Red Pepper Sauce:
1 tbsp butter
1 tsp red or cayenne pepper
Whisk and place the yogurt and garlic on a serving dish.
Boil the water with the salt and vinegar in a large pot. After bubbling, turn down the heat to medium-low.
Crack the eggs into the water side by side. Cover and let the eggs cook for 3 minutes.
Take the eggs out with a perforated spoon. Place the eggs over the yogurt on the serving dish.
Heat up the olive oil in a small pan and add the cayenne pepper. Then, pour it over the eggs ans serve with bread on the side.

Hi Binnur. I'm sorry to comment so long after the post, but I wanted to tell you how much I love this recipe. I've made it for breakfast two days in a row, and I might even go to the store for more yogurt so I can have it for dinner tonight too!
I've never tried Turkish food before, but this site was highly to me recommended by someone. I just made these eggs for lunch for myself and my 2 young children. I couldn't believe how simple and delicious our meal was. Thank you for posting these recipes! :oD

I recently discovered cilbir at a restaurant in New York and fell in love with it. On discovering our cab driver was Turkish, I mentioned to him my new favorite breakfast. He said he never heard of it and Turkish people would never eat such a thing! Is it regional? Was he just giving me a bad time? I was really confused by his complete dismissal of his people eating poached eggs (yes, he went so far as to say no poached eggs at all - with or without yogurt!). Is this controversial? Just curious. Thanks for the lovely, simple recipe.

I'm not able to get Turkish yogurt here in Scotland - can I use ordinary plain yogurt for this? It sounds wonderful and I'd love to try it out.

Sure, you can use ordinary plain yogurt:) I stated Turkish yogurt because the taste of the dishes are always better with it;)
