Bulgur Pilaf

(Bulgur Pilavi)

Bulgur Pilaf
1 cup Turkish bulgur, large grain, washed and drained
2 cups hot chicken broth
(or 2 cups water and 1 chicken bouillon)
1 medium onion, chopped
1 medium tomato, diced
1 cubanelle or green pepper, chunk
2 green onions, chopped
1 tbsp butter
1 tsp salt (if you use a bouillon then 1/2 tsp salt)

Saute the onion with the butter in a medium-sized pot. Add the tomato, green pepper, green onion, salt and warm chicken broth. When the water stars bubbling, pour in the bulgur and stir. Cook on low heat with the lid half covered. Stir occasionally until the water evaporates.

Serve Bulgur Pilaf with Ayran or Cacık. It's a tasteful, light and healthy dish you can have for lunch on its own. It also goes very well as a side dish with any kind of chicken meal.

* This is a vegetarian dish (use two cups of water instead of chicken broth or bouillon).

Binnur,
I made the bulgar pilaf today and I found myself adding water to the pot because the bulgar was still uncooked and hard. After a while the bulgar was soft but I had actually added to much water. Do you suggest I soak the bulgar in water for some time before I add it to the pot? Also mine didn't look as red. Did you also add some crushed tomatoes? Also is bulgar supposed to be a bit more clumpy than rice? Thanks for your help.

Hi,
Some bulgur grains may be hard. Wash it with hot water and drain. If you like soak it into the hot water for a few minutes. While you cook always add little by little hot water if necessary. I did not use crushed tomato for it but you can use also use tomato paste and yes, Bulgur Pilaf is more clumpy the rice pilaf:)

I'm Filipino and my husband is American, but I love turkish food. I like lamb a lot. My husband doesn't like lamb but one time I made Adana Kebab using your recipe He loved it. A lot of times we go to a Turkish restaurant. Your recipes are great!!

I didn't have any peppers so I substituted a can of Rotel diced tomatoes and chilies. Turned out great. Hot and spicy...

Kuskus (Couscous) is a small tiny ball shape pasta, Bulgur is grain that come in different sizes.

Wow, this was yummy. Even my two year old loved it! I made it with one red pepper, one orange pepper, one onion, 1/2 can of chopped tomatoes w/ green chilis, 2 T of tomato paste, bulgur, and chicken bouillion cube. When all of the broth was almost gone, I turned off the heat, placed a paper towel over it, and then put the lid on it. I left it for 15-20 minutes and it was perfect. Thanks so much!

Thank you so much for this recipe! My Turkish boyfriend sent this to me as I wanted to make some bulgur for dinner. :) I shared it with my friend and we absolutely loved it!

I'm not a very good cook at all, but your recipes are simply easy and wonderful and I will definitely test them out on my boyfriend - hopefully he'll enjoy some Turkish meals for dinner in America! :)

My boyfriend also doesn't care for bulgur, but maybe he'll like it after this recipe!

What is purpose of washing and afterwards draining the Bulgur? I didn't wash the Bulgur and it ended up being sticky after all the water evaporated in the pot.

Hi,
To remove the starch, you need to wash and drain rice or bulgur.
Otherwise you will have sticky pilaf like risotto:)

Hi Binnur - tried this recipe tonight and it was fantastic! We moved to Istanbul a few weeks ago and have been wanting to learn to cook a few basic Turkish foods. I didn't have any green peppers but it was great. I added a little garlic and tomato paste to the mix and served it with Fasulye.

Thanks a lot for this recipe, it's the only one I've found that doesn't sautee the grains first (which is how my aunt used to make it). I've added a grated carrot to the onion in the beginning, hope it comes out well!
