Beef with Mushrooms
(Etli Mantar)
200 gr beef, cut in cubes
200 gr mushrooms, sliced
1 onion, sliced
2 garlic cloves, sliced
1 tbsp butter
2 tbsp extra virgin olive oil
1 tbsp tomato paste
1 + 1 cup hot water
1 tsp salt
1/2 tsp pepper
Cook the beef cubes with their own juice on medium-low heat. Then add 1 cup hot water and cook over low heat until the beef pieces are tender. Add the butter, olive oil, onion, garlic, salt and pepper and saute for about 10 minutes, stirring occasionally. Add the tomato paste, mushrooms and 1 cup hot water. Cover and cook for another half hour on medium-low heat.
Serve with any kind of rice.
Note: Make sure not to wash the mushrooms as they will retain water and lose texture. Instead, wipe off with a damp paper towel.

Actually, washing mushrooms isn't a problem. They only absorb about 1/4 an ounce of liquid per pound after a 15 minute soak.

how long do you have to cook the beef in the water before adding the butter and oil and other ing. And do you have to fry the onions before adding them?

It needs to be cooked until they are tender or almost all the water evaporates. Then saute the beef, butter, olive oil, onion, garlic, salt and pepper and saute for about 10 minutes.
I am slightly confused as to what this means....

Ok so I start cooking the beef cubes as normal in a pan, like frying, no water or oil etc?

Beef cubes leaves its own juice when you start to cook in a medium size cooking pot on medium-low heat.
Cook until there is no more juice left in the pot. Then add 1 cup hot water.

I've cooked this dish a few times now and added add green capsicum pepper and chopped chilli with the onions. It's delicious served with cheese melted on top and rice.
I cooked this dish last night and it was beautiful.
