Lamb Tandir

(Kuzu Tandir)

Lamb Tandir
3 pieces Lamb Shanks
1 tsp salt
1/2 tsp pepper

Place the lamb shanks in a large steel pan. Pour water until they're all covered. Cook on medium-high heat for about 10 minutes. Remove the scum from the surface. Then reduce the heat and start to simmer. Season with salt and pepper. Occasionally turn the shanks over to cook both sides. When about half the water evaporates, add more hot water to cover the shanks again. Cooking time is about 4 hours. When you enter to last hour, increase the heat to medium. Turn the shanks over a few times to make sure both sides are equally cooked. When all the water evaporates, turn the heat off and sprinkle some oregano on top.

Serve Kuzu Tandir with any kind of Pilaf (Turkish Rice Pilaf, or Pilaf with Almonds or Pilaf with Orzo). I also highly recommend to serve this with Olives with Garlic and Shepherd's Salad.

You have got really good recipes and I congratulate you. It must be taking a lot of your time to put these together. I will be telling my friends around the world who like Turkish food about your site so they can also try some of these wonderful recipes at home.

As for the lamb recipe, I put one large shank (ı use the front legs) in a large pot and without adding water. I leave them to cook in its own juice for about 6 hours on very low heat. I even leave home, go tot work and come back while it simmers. Then I place it on an oven tray lined with pita or lavas bread and bake it for an hour. It is the easiest way of doing tandir at home.

time:) We love lamb, I cook Tandir about every three weeks! :)

My sister discovered Tandir Kebab not too long ago and she goes to this Turkish restaurant to have it at least once a week. Since I used your recipes before I decided to try Tandir. And it came up better then any place we ever had before. Thank you so much for the wonderful site - I make dishes as a child I hated however now the smell of it brings me to tears - remembering my mom who passed on.

Hi,
We don't make sauce for the lamb tandir. Because the lamb is very tasty in my country and therefore doesn't need any sauce:) Probably the cook wanted to dress it for the foreigners who are used to eat the meat with a sauce.
