Cantik

Cantik
1 pkg Pizza Dough (630 gr)
2 tbsp flour

Filling:
250 gr medium ground beef
1 small onion, grated
3 tbsp water
Salt
Pepper

Sauce:
1 tbsp butter, melted
1/2 cup plain Turkish yogurt
1/2 cup milk
50 ml extra virgin olive oil

8x8x2 (2L) Pyrex dish

Sprinkle some flour on the table. Give a long, tube-like shape to the dough. Cut in 24 equal pieces (picture). Put aside.

Knead all the filling ingredients in a bowl. Open up each dough piece sideways and put a tablespoon of the filling inside. Close it up tightly and place them in the Pyrex (grease first) with the closed parts facing the bottom.

Whisk all the sauce ingredients. Pour all over the dough in the Pyrex.

Preheat the oven to 175 C (350 F). Place the dish on the middle rack and bake for about 40 minutes until light golden brown. Serve Cantik (pronounced similar to "john took") while still hot with Ayran.

Sevgili Sirince,
Memleketten uzakta olunca unuttugumuz yemekleri hatirlamak daha kolay oluyor:)) Senin de benim gibi hamur islerinden hoslanman ne guzel. Senin orada yogurt kaymagi bulma imkanin var sosun icine 1-2 kasik ilave edersen daha da lezzetli olur:)

Cantik is also known as Tava Lokumu. For some reason whether I make stuffed peppers or wrapped leaves my meat always seems to stay clumpy/dry so did my Cantik filling. What am I doing wrong? How can I get my meat dishes moist and tender? Thanks.

Hi,
Did you try my recipes? I can give you some pointers:
- You should use medium or regular ground beef, never use lean or extra lean. If you can't find medium or regular ground beef, I would add some olive oil and butter.
- Make sure you put enough rice and water, if not, it'll be dry.

Thanks. I will let you know how it turns out the next time I make the Yaprak Dolmasi. You blew my mind away by using Pizza Dough for the Cantik. I never would have thought of it. Very clever.

merhaba,
Uzun zamandir blogunuzu severek takip ediyorum. Simdiye kadar denedigim hersey cok guzel sonuc verdi, ozellikle cantik favorilerimden. Kendi blogumda da bu tarifinizin linkini verdim. yapan butun arkadaslarim cok sevdiklerini soylediler. Genelde yorum yazmam ama tariflerinizden bu kadar cok faydalaniyorken, tesekkur etmek istedim.

The ground beef is raw. But it will be cooked with the dough in the oven:) Give it a try it is delicious;)

It is true.The meat was cooked inside the dough.Iam eating it right now and Iam very happy with the outcome. Instead of yoghurt I added cream to the sauce, I was worried that I at the moment didnt have yoghurt till the time I took cantik from the oven.The crust was so crunchy and cream gave it rich, milky flavour:)

I am glad you like it:) Traditionally, the sauce has a few spoon of milk or yogurt butterfat in it:)
