Spinach with Rice

(Pirincli Ispanak)

Spinach with Rice
1 bunch spinach, washed and drained
2 tbsp rice, washed and drained
1 garlic clove, sliced
1 medium onion, sliced
1 medium tomato, diced
50 ml extra virgin olive oil
1 pinch red pepper
Salt
Pepper

Sauce:
1/2 cup yogurt
1 garlic clove, mashed with salt

First cut the spinach in large pieces. Saute the onion with olive oil in a medium pot, then add the garlic. Cook for a few minutes until the smell comes out. Be careful not to burn the garlic. Then add the spinach, tomato, rice, red pepper, salt and black pepper in the pot. Cover the lid and cook for about 20 minutes (until the rice is cooked) on medium-low heat.

Serve Spinach with Rice with the yogurt sauce.

If you like, you can also add some ground beef.

* This is a vegetarian dish.

Spinach with rice is one of my favorite dish over all. I love spinach. I was thinking to cook this but I didn't know how to do it but now I do know :)

This was really good. I put two table spoons in but i wish there was a bit more rice :(.. i split it into three portions and i ended up getting none!!

Hi Hillary,
I love to have this dish with more rice, too, but my husband doesn't like it:(
I also like Leek with Olive Oil which is under "Olive Oil Dishes" section with more rice. You may like it too:)

Hi Binnur,
This was really creamy and delicious, used pudding rice.
Your website is great, I use it all the time, in fact I have some Koy Ekmegi rising at the moment. I wonder if you have ever tried "bici bici", the rose flavoured sweet you can buy from stalls in Adana. It is too sweet for me but my husband loves it and I can't find a recipe anywhere.

Bici is a kind of muhallebi without milk, shredded ice and sherbet as a topping. I am going to post it in the future:)

Hi Binnur,

The spinach that I buy in the U.S. indicates on the package that it has been cleaned and triple washed. So, I don't necessarily wash them before cooking and they don't seem leave their water during the process. So, should I add a little bit of extra water while cooking the spinach?

Hi Stephanie,
The spinach contains a lot water in it so no need to add water when you cook. There is also tomato in the dish. Put the lid on and cook:)
