Talash Börek

(Talaş Böreği)

Talash Börek
1 Pkt Puff Pastry (Tender flake 397 g)

Filling:
200 gr beef or lamb cut in cubes (lamb tastes better)
1 tbsp butter
1 small onion, sliced
1/2 cup sweet peas, frozen
2 tbsp crushed tomato in can
1 cup hot water
Salt
Pepper

On top:
1 egg, lightly beaten

First saute the beef or lamb with butter, add the onion and cook for another 3-4 minutes. Add the rest of the ingredients along with 1 cup of hot water. Cook over low heat until most of the water evaporates.

For the Puff Pastry, follow the instructions on the box. Each block of pastry rolls out into a 12-inch (30 cm) square. Cut each dough in half to get rectangles. Equally divide and place the filling on one side of the rectangle. Fold, press the ends with your finger to close. Brush them with the egg on top. Put parchment paper on the oven tray, the place the Borek on it.

Preheat the oven to 175 C (350 F). Bake for about 15-20 minutes, until golden brown.

Serve Talas Boregi while still hot with Ayran, cherries or watermelon.

I love puff pastry with fillings! Reminds me of spanakopita of greek origin.

Just wondering where from the name? talas borek? does it have any english equivalent?

Talas (Talash) means wood shavings which describes the dough how flaky and crispy it is:) Greets.

Hi,
For more than six centuries, the Ottoman empire ruled a large area starting from Egypt through some parts of North Africa, Balkan countries to Central Asia. As a result of this, the Ottomans introduced their culture and dishes to these countries.

-All kinds of Boreks including Spinach Borek - spanakopita. They all belong to Ottoman-Turks like the rest of this list:)

-Musakka (Mousakka)
Moussaka basically is the cooking of vegetables chopped into small pieces with small chunks of meat or ground beef and onions.
Moussaka originates from Turkey and it is a genuine Ottoman cuisine with a wide variety of moussaka choices like Potato Moussaka, Zucchini Moussaka, Cauliflower Moussaka, etc.,

-Lokum (Turkish Delight)

-Baklava
It is of Central Asian Turkish origin, but its current form was developed in the imperial kitchens (Ottoman Empire) of the Topkapı Palace (located in Istanbul).

-Yogurt
Origins of the word "yogurt" comes from the Turkish word "yoğurt", deriving from the verb "yoğurtmak", which means "to blend" - a reference to how yogurt is made. There is only one Yogurt which is Turkish Yogurt.

-Tarhana Soup
Tarhana is the first instant soup which was invented by Central Asian Turks. In the summer time they mixed fresh vegetables with yogurt to prepare their hearty winter soup.

-Pide (pita)

-Döner means rotary in Turkish which called Shawarma means çevirme=döner

-Turkish Coffee

-Grape Leaves Sarma which means rolled in Turkish

-Green Pepper Dolma which means filled in Turkish, etc. the list goes on and on....
