Fried Zucchini with Yogurt Sauce

(Kabak Kizartmasi)

Fried Zucchini with Yogurt Sauce
2 zucchinis, peeled and cut in round slices
1/4 cup milk
1/2 cup flour
1/2 cup sun flower oil

Garlic-Yogurt Sauce:
1/2 cup plain Turkish yogurt
1 garlic clove, mashed with salt
2 tbsp dill, chopped

Put the zucchini slices on a shallow plate and soak in milk. Leave for about 20 minutes.

Place the flour in another shallow plate. Remove the zucchini slices from the milk (don't squeeze) and flour the both sides.

Heat up the oil and fry the zucchini slices until both sides turn to a light golden colour. Afterwards, place them on a paper towel to soak up any extra oil. Arrange on a serving platter and serve with garlic-yogurt sauce while the slices are still crunchy.

Serve at room temperature on the same day.

I have too much dificulties with frying. Always oil splashs around and I get burns... etc.
Could you give any suggestion about "easy" frying ?

Hi,
If the oil splashes, the reason is probably water drops. For example
if you fry any vegetables, wipe them dry first. Green or red pepper
always slash oil even when they are dry. To avoid burns, I always
cover over the skillet with a Splatter Screen. I also put paper towel
on it, then it is absolutely safe:) While still frying, if you need to
turn them, take skillet from heat, turn them and put skillet back on
heat.
The zucchini slices should be egg washed first (it is watery) then
floured on both sides (so they get dry). Then there won't be any
splashing. But using splatter screen is always more safe.

Hi Binnur, I tried this recipe but I had a problem with the flour "slipping off" of the zucchini. By that, I mean that the flour would fry to make a breading around the zucchini, and would fall off whenever I flipped the zucchini over. Do you know what I might be doing wrong and if there is a way to prevent this? Thank you :D

Hi,
Do you make batter with milk and flour instead of dipping zucchini in them, separately? Batter may come off from the zucchini slices...please follow the recipe, they will be perfect:)

Hi.Should zuccini slices be egg washed first or dipped in milk? It resembles me the carrot dipped in egg and breadcrumbs, maybe you happen to have this recipe?ellerine saglik

Tesekkur ederim:) They should be soaked into milk, then floured. There is no eggs or bread crumbs in the recipe:)
