Gavurdagi Salad
(Gavurdagi Salatasi - South East Anatolia)
2 medium tomatoes, discard the seeds, chopped
1/4 red or white onion, finely chopped
2/3 cup parsley, finely chopped
2 tbsp extra virgin olive oil
1 tsp pomegranate paste or Grenadine syrup
2-3 tbsp lemon juice
1 tsp Cayenne pepper, crushed
1 tsp sumac
Salt
Garnish:
1/4 cup walnut, crushed
Rub the onion with salt and sumac. Toss all the ingredients in a medium sized bowl. Place in a service plate and sprinkle the walnuts all over. I find that Gavurdagi Salad is more delicious if you put it aside for a few hours before you serve it :)
Serve with any kind of Kebab or Barbecued meat.

Hello Binnur,
I love reading your recipes and this one will definitely be for lunch today!
Can you please tell me what Gavurdagi means literally?
Thanks,
Joan (in Milan, Italy)
Hi Joan,
Thank you:) Please have this salad with a tablespoon, you definitely
don't want to miss the delicious juice:)
The salad is named after a mountain - Gavurdagi is located in the southeast Anatolia. Afiyet olsun,
Tesekkur ederim, Binnur!
Joan
hello i want to know have many people i can serve this salad to
Thank you, elif
Hi Elif,
It depends how much you serve and what else is served with it. But I
would say 2-3 servings:)
Fantastic salad, had it once in Istanbul in a huge kebab restaurant near Atakoy.
Seems quite difficult to find on the net, perhaps more of a regional dish (?) so it's nice to find this excellent recipe with a great picture too! :)
Here we cannot buy pomegranate paste and I would like to try out this recipe. I even don't know what pomegranate paste tastes like - is is sweet? Can I replace it with something else?
OO! This looks like a fabulous side dish! :)
Hi,
Pomegranate paste is reduced pomegranate juice sold in small bottles.
You can use Grenadine syrup instead of pomegranate paste.
You can find it in Turkish or Mediterranean stores if you have any your area.
The pomegranate paste is critical to the flavor of the finished the dish:)
Hi! In the U.S. you will find this known as "pomegranate syrup" and not pomegranate paste, which should make it somewhat easier to find (Binnur Hanim is right, you will find it in Turkish/Mediterranean or sometimes Middle Eastern stores)
P.S. Thank you, Binnur, this is my favorite Turkish salad!
My favorite all time salad. I could eat nothing but this, with a little grilled chicken on the side. I can even find pomegranate molasses in Wegman's and you can certainly order it through Amazon. However, in a pinch I would make my own, not hard at all, or use balsamic vinegar as a substitute.
