Mosaic Cake

(Mozaik Pasta)

Mosaic Cake
60 ml unsalted butter, melted
1/2 cup sugar
1/2 cup milk
4-5 heaping tbsp cocoa powder
1/4 cup hazelnuts, crumbled, lightly roasted (optional)
300 gr social tea biscuits, use thin ones or Turkish Ulker or Eti Petite Beurre

Mix all the ingredients, except the biscuits, in a large plastic bowl with a spoon. Break the biscuits into small pieces. Put them in the mixture and mix together.

Place the mixture in the center of a 50 cm long piece of aluminum foil. Give it a long log-like shape with the spoon. Then with the aluminum foil, first fold over the long sides tightly, then fold the rims. Give it a log shape with your hands.

Put it in freezer. Leave it there for at least 2 hours. When you want to have some, open the aluminum foil, slice 1 inch thick slices and serve while still cold. You can keep the rest in the freezer covered with the aluminum foil.

Mosaic Cake with Orange Jam
1/2 cup Orange Jam, cut in small pieces

Prepare the Mosaic Cake in the same way. Add Orange Jam pieces and toss. Keep in the freezer then slice and serve.

To Anonymous - It's fine to eat sweets as long as you don't overdo it. In fact your body needs it once in a while. This looks like a very yummy dessert...

I have always loved this cake as it is easy to make. Special tip from my Uncle Suhan - try a citrus jam as a glaze. Yum!

This looks so good, I had to try it. But I'm afraid I didn't get the conversions right. 300 gr of biscuits seemed like a lot for the recipe.
Thank you for sharing the recipes. My mother-in-law is Turkish and is the most wonderful cook! But all of her recipes are in Turkish and I am still learning....I love that you have the recipes in Turkish and English. What a labor of love!

300 gr of biscuits are not much. It will absorb all the other
ingredients and combine very well. But if you like, add biscuits
little by little until you think it is sufficient:)

Dear Binnur,

I substituted "Graham Crackers" (used for cheesecake crusts) for the Petit Beurre biscuits because they were not available in my country. It was the closest thing I could find when it comes to taste.

They turned out ok, thank you for sharing this recipe =)

Hello,
This was one of my favorites when I was little, so I tried but only used 150 grams biscuit and believe me it was totally enough! I think there is something wrong about the amount of biscuits. If you want to double the other ingredients it would work that way but with the written amount there is way too much biscuit in there.The taste was perfect by the way...

I totally love this recipe.Also in Italy they called this recipe as Choc.Salami ( i doubt its russian since salami is well known name in Italian kitchen)Do you have any idea about the recipe called "snow white"-pamuk prenses.Thats how my aunt was calling but not sure if its the orginal name.

Merhaba.Im not from Italy,Russia and Turkey, and I have no idea what taste the cake should have, but I made an effort to make one today and I like it. One question is wether this cake is like icecream? Am I supposed to eat it very cold and keep in the freezer?My cake tastes like icecream for me and it's quite a change coz ive never eaten a cake directly from a freezer. Im a bit confused:P and im not sure if im not doing wrong?... Greetings, ann

You are doing right:) Mosaic Cake should be eaten directly from the freezer. You should keep it in the freezer, then slice it up and put it back again:)

Hi Binnur.
I'm anna of indian, portuguese decent and we make something similar but its got crushed almonds in it and we call it crescent moons. and my greek friends make the same and they call it greek shortbread. i see your recipe doesnt have crushed almonds but i would love to add in a splash of rose extract for the special touch!

My mother used to put crushed hazelnuts in it. But I prefer to have the mosaic cake without any nuts in it. I love it with the Orange Jam:)

Finally a Mosaic Cake that tastes awesome and is soooo simple. I’ve tried several recipes but none was so tasty! i also tried substituted the butter with cooking margarine and the cow’s milk with soya milk and it came out a super yammi vegan version mosaic!!! Thank you so much for sharing the receipt.
I also thought that 300grs of biscuits were too much but adding in stages I indeed used 300grs and consider it a perfect quantity.

I make the same but with powdered milk so it is more solid and doesnt have to be kept in a freezer. Powdered milk has the function of flour because the cake is not baked. I also add nuts and raisins to the paste. Greetings

Just tried this recipe and its amazing! I found they had just the right amount of biscuits, because they get absorbed into the mixture and it needs plenty of biscuit otherwise it will be too runny. Amazing and can't wait to make it for my dad who has loved mozaik cake since he was young.
