Kidney Beans with Lamb
(Kuzu Etli Kuru Fasulye)
1 can of kidney beans (540 ml), gently washed and drained
150 gr lamb, cut in cubes
1/2 cubanelle pepper, chopped
1 medium tomato, peeled, diced
2 green onions, chopped
1 tbsp crushed tomato, canned
50 ml extra virgin olive oil
1 + 3/4 cup hot water
Salt
Pepper
Cook the lamb cubes with their own juice. Then add the rest of the ingredients with 1 cup of hot water, except the kidney beans. Cook over medium-low heat until most of the water evaporates and the lamb pieces soften. Then add the kidney beans with 3/4 cup of hot water. Cover the lid halfway and cook for 20-25 minutes on medium heat. If necessary, add a little bit more hot water.
Makes 2-3 servings.
* If you use dry kidney beans, you should boil them first until they soften, then drain. Add it with all the ingredients with 1 3/4 cup hot water.

Thanks for the recipes, I use your recipes all the time and they turn out to be delicious.
Do we fry the lamb with the olive oil? Also, I read somewhere that extra virgin olive oil is not good for frying, but is perfect for oven and salads. Because of tiny granules that burn in extra virgin olive oil, it causes cancer.

Thank you:) No, you are not going to fry the lambs with the olive oil. You will cook the lamb cubes with their own juice.
I don't use olive oil for the fry. Like you said it is not healthy:) I always use sunflower oil and butter for frying.
How much water does dry kidney beans require to boil until they soften?
It depends on how much kidney beans you will boil. Cover the beans with
water and boil. If they are not soft enough to cook, add more boiling water into the pot:)
hi Binnur. i bought dry white beans (Turkish brand) to make this dish, i wounder, should i soak them overnight, or just boil them without soaking them first?
if they don't require overnight soaking , how -approximately - long should i boil them before they soften?

The dried kidney beans should be soaked overnight and boiled until they are a bit softer (easy to bite) and drained. I can't give you the exact time for this because it depends on the type of the beans. Some cook for a shorter period of time, some don't. Then, cook the softened beans with the rest of the ingredients:)

I have to you one question.I bought in turkish shop original sivri biber(green, thin and long). But it is too much spicy. I even took out the seeds and reduced amount but anyway... You are using cubanelle pepper and it is not sivri, right? If i use sivri biber what should be the right propotion instead of 1/2 cubanelle pepper? In turkish cookbooks they use sivri biber and measuring almost everything in turkish tea glasses. Could you please help me because dishes came to spicy and i couldnt eat them.

Sivri biber and cubanelle pepper (carliston biber in Turkish) can be both used for the dishes. I use cubanelle pepper because I can't find sivri biber here easily:) Sivri biber is available hot and sweet. If you can't find the sweet ones, use the cubanelle pepper. You can use whole or half of the cubanelle pepper as you like.
As you probably noticed, I dont use tea glass or fincan for measurements. It is not convenient for the followers or for me:)
