Potato Borek

(Patates Boregi)

Potato Borek
1 cup sunflower oil
1 cup yogurt
3 eggs
4 medium sized potatoes, peeled, cut in cubes
3 small onions, chopped
1 carrot, peeled, cut in cubes
1/2 cup sweet peas, frozen, soaked in hot water and drained
1 tsp mint
1 tsp cumin
1 tsp cayenne pepper
1 tsp salt
2 1/2 cup flour

13x9x2 oven dish

Whisk the sunflower oil, eggs and yogurt in a plastic bowl. Add the rest of the ingredients except for the flour, and mix. Slowly add the flour in and knead. Spread equally into the oven dish.

Preheat the oven to 400 F. Bake for about 40-45 minutes until the top is nicely coloured. Serve it for breakfast, as a snack with tea or as a side dish for a light meal:)

Makes 8-10 servings.

Merhaba! This is a great and quick way to make börek. I increased the salt a bit, as my Turkish husband requested. Even my Turkish mother-in-law wants the recipe. Çok teşekkur ederiz :)

Thank you:) I've never used grated potato in this recipe.So the taste may be like eating mashed potato. But it is up to you:)

This was a bit too much of onion for me, but my family loved it. I could not feel the taste of potato, so if you are not the onion person I would reduce the amount.

Easy to make :)

Its like a cake with vegetables:) maybe will I cook one day, however I do not like to bake raw potatoes because it lasts forever:)!
