Turkish-style Potato Salad
(Patates Salatasi)
2 medium sized yellow potatoes
Dressing:
60 - 70 ml extra virgin olive oil
2-3 tbsp lemon juice
Salt
Pepper
Garnish:
2 fresh green onions, chopped
Some red onion, sliced
Boil the potatoes in water. Remove the skin and cut them in medium sized chunks. Whisk all the dressing ingredients. Toss it with the potatoes while they are still warm. Sprinkle fresh green and red onions all over, serve.

Thank you so much for this website. Many of my colleagues are from Turkey, and one of my friends taught me a delicious variation of this recipe. She steams the potatoes in a plastic bag in the microwave (no piercing required). Then, peel and cube the potatoes and, while thy are still hot, dress them with lemon juice and olive oil. Mix the potatoes and dressing with shredded onion, carrots and lettuce as well as peeled an and diced cucumber and tomato. Add salt, pepper, chopped parley, and red pepper or paprika at the end. Yum! I have been known to have this for dinner 4-5 times a week, either as a side dish or main course!
