Bulgur Pilaf with Spinach

(Ispanakli Bulgur Pilavi)

Bulgur Pilaf with Spinach
1 cup Turkish bulgur, large grain, washed and drained
1 medium size onion, cut in small pieces
3 tbsp extra virgin olive oil
1 tbsp red pepper paste
1 3/4 cup hot water
1 tsp crushed red pepper
1 tsp cumin
Salt
Pepper
Half bunch of spinach, roots cut off*, washed, drained

Saute the onion with olive oil for a few minutes. Add all the ingredients except the spinach and stir. Cover and cook at low heat. When you start seeing holes on the surface of the bulgur add the spinach and stir slowly. Cover and cook for about 5 more minutes.

Serve warm or cold with Yogurt on the side. It is a great dish, especially for lunch:)

* Don't throw away the roots of the spinach, instead make Spinach Root Salad.

Makes 2-3 servings.

Meal Ideas:
- Tomato Soup with Cream and Mastic Pudding.

I hope it's not too late to backtrack on your recipe Bulgur Pilaf with Spinach. Last Monday I went to a Turkish resto and my hubby ordered what they call Incik Pilaf. The texture is not rice so (boast my intelligence, praying that I'm right) most probably bulgur served with lamb shank bone inclusive ;) It tasted hot a spicy and when I stumble this site looking at the picture and the recipe called for (red pepper paste) this must be it. But what I want to know, red pepper paste, what does it consist of (eg. what kind of pepper, bell?, any food additive) coz' here in Singapore, we have chilli paste consists of red chillies and vinegar. I would love to try this again. I told my hubby to go again at the resto today but hubby said, "Can we do this once a month basis and not twice or thrice weekly? We gotta save money!" Sheessshhhh......... yes, Turkish food is kinda expensive here but can't blame them, they're delish!

Hi,
I am glad you liked the Pilaf. I posted Pilaf with Lamb which I used
incik (shank). You can use bulgur or regular rice for this pilaf. Here is the address;

That was yuumy & easy :) the only proplem is that you said "Makes 2-3 servings" and I almost finish it by myself

This is so easy to make, delicious, and healthy. I always triple the recipe (except I don't triple the cumin) so I can have some leftovers.
