Chicken Doner Kebab
(Tavuk Doner)
2 pieces of chicken breast, boneless, skinless, seasoned with salt and pepper, rubbed with 1 tbsp olive oil
~175 g ground chicken
1 small onion, grated
1 tsp oregano
1 tbsp extra virgin olive oil
Salt
Pepper
Add the onion, oregano, olive oil, salt and pepper into the ground chicken. Knead and give it a round shape, then place in the middle of the two pieces of chicken breast.
Cover in plastic wrap and leave in the freezer overnight. The next day remove them from the fridge 45 minutes before cutting. Use a knife, electric knife or meat cutter to shred it. Then fry in a Teflon pan (be careful not to over-fry) on both sides. Serve inside a bread corner or on a pide with Yogurt Sauce and tomato slices. If you like, you can also add lettuce leaves or onion slices too....
Makes 2 servings.
Sauce for Chicken Doner Kebab
1 cup yogurt
1 small cucumber, discard the seeds with a teaspoon, grated and squeezed dry
1 tbsp dill, chopped
1 garlic clove, smashed with salt
1 pinch sugar
Salt
Pepper
Mix all the sauce ingredients and have it with Chicken Doner Kebab.

I've never seen doner with sauce before. Is it a regional thing? I've been living in Turkey for about 5 years and all my doners have been very simple and unsauced (except iskender, if it counts). Your sauce looks great though.I love your recipes.

Iskender is a kebab as you know and it's served with pide and tomato sauce. It is a traditional dish and can't be changed:) Chicken Doner is new, it emerged as an alternative doner after mad-cow disease, it can be served however you like, without yogurt or with yogurt:) I am sure there are a lot of dishes that Turkish cuisine offers you did not taste yet...5 years is a very short period to discover Turkish Cuisine:) I am a Turk who was born and raised in Turkey and I am still

how you keep it in between the 2 breast?. is it like slicing the breast and wraping the ground with it?

Place ground chicken in the middle of the two pieces of chicken breast, like sandwich. Leave in the freezer overnight. Then slice and cook.

im a little confused about this recipe...how thick do i cut the chicken slices? and do i cut it horizontally? what about when i get to the mince part do i just continue cutting? thank u :)

Hi Cindy,
Place the frozen chicken on the cutting board. One of the chicken pieces should be on the bottom. It is like a sandwich - there is a ground chicken between the two buns (buns = chicken pieces).
First, you will start to cut from the top which is one piece of chicken, then continue to cut the ground chicken, and finally you will reach to the second piece of chicken at the bottom. Cut it in thin slices. Every slice should have ground chicken between the two pieces of chicken.

Binnur Hanim, bir sey soracaktim. Electric knife gibi bir seyim yok. Dondurduktan sonra normal buyuk bir bcakla kesmek ne kadar zor olur sizce? Siz nasil kesiyorsunuz? Cevabiniz icin simdiden cok tesekkurler.

Ben elektrikli bicak kullaniyorum ama normal buyuk boy bicak ile de kesebilirsiniz:) Kesilecek tavuk azaldigi zaman kagit havlu ile tutun elinizden kaymasin. Afiyet olsun!
