Green Beans with Eggs

(Taze Fasulye Kavurmasi)

Green Beans with Eggs
250g flat green beans, trimmed, cut in medium size
1 small onion, sliced
1 tbsp butter or 3-4 tbsp extra virgin olive oil
Salt
2 eggs, lightly beaten
1 tsp crushed red pepper (red pepper flakes)

First, boil the green beans for 3-4 minutes, drain. Meanwhile, saute the onion with salt and butter in a large pan for 3-4 minutes. Add the drained beans, saute for about 10 minutes at medium heat. Stir occasionally. Pour the eggs, stir but not too much. When the eggs are cooked, turn the heat off.

Garnish with crushed pepper. Serve as a light lunch with Turkish Bread and Arugula Salad.

Makes 2 servings.

I love this dish! My grandma used to make it, it is such a comfort food for me, you wouldn't expect green beans to be such. I have a recommendation to add a twist to this recipe, try this dish with some cumin as seasoning, too.

I made this with cumin, as one person suggested (Mexican, love cumin :) ) and my two year old went nuts for it! We've had this three times in one week. I'm excited to cook my way through your wonderful site. Thank you so much for sharing your lovely recipes.
