Pilaf with Chickpeas
(Nohutlu Pilav)
1 cup chickpeas, canned, rinsed, drained
3/4 cup long-grain rice, washed, drained
1 small onion, finely chopped
2 tbsp butter
1 1/4 cup chicken or beef stock
1 tsp salt
Pinch pepper
Melt the butter and saute the onion for about 2-3 minutes in a cooking pot. Add rice and saute for 2-3 minutes while stirring. Pour in the chicken stock. Add the salt and pepper. Turn the heat down to low. Add the chickpeas 5 minutes before the rice is cooked, stir. Cook until the rice absorbs all the water.
Let the Pilaf stand for 5 minutes. Then serve with any kind of beef or chicken dish.
2-3 servings.
Meal Ideas:
- Steak with Vegetables and Tomato Sauce, Raisin Compote, Celery Root with Olive Oil and Semolina Dessert.

I was wondering if you knew any turkish beers of note. My fiance is a big beer drinker and it would be nice to do a whole turkis dinner paired with a beer.

This recipe looks delicious. But I don't see the chickpeas in the ingredients list. What quantity do you use, and do you use canned? Or do you soak and cook the dried ones?

This pilaf is simply delicious!!!! I just made it and can't get away from the pot. I'm afraid my husband won't get a chance to even try it. Thank you very much for such an easy to follow recipe. Now we can enjoy turkish cooking in the comfort of our home. I'm looking forward to trying all of the recipes here. :)
Teşekkür ederim, this rice with chickpeas recipe is great, I cook it alot since I found it on your site. Though very simple, it never crossed my mind to combine such few ingredients to make a dish.
Hi Binnur, I am living in Turkey and I can only find bagged dry chickpeas called Bakliyat. Am I supposed to soak them overnight in water before cooking these beans? They seem very, very dry.

Yes, soak them overnight in water then boil the chickpeas in 3-4 cups of water until softened and drain. They are ready to cook:)
I noticed that in your basic pilav recipe, you cover the rice with boiling water for fifteen minutes before continuing with the recipe as written here. Why isn't this process included in the nohutlu pilav- instead you add an extra quarter cup of stock?
Also, when you add the chickpeas, are you supposed to stir the rice mixture at that point?

Cooking the rice with some vegetables has different processes. Just follow the instructions in the recipes:)

This is exactly what I had when I was in Istanbul last April. There was a food street vendor, selling this pilav and he added the grilled chicken on top of the rice.
That was my most fave food during my Turkey trip. :) :)
