Artichoke Hearts Salad
(Enginar Kalbi Salatasi)
Artichoke hearts, 340 ml canned, washed, drained
8-10 mini potatoes, cooked, peeled and cut in halves
1/4 cup red onion, sliced
1/4 cup kashar or mozzarella cheese, cut in cubes
1 tomato, cut in bite sizes
Dressing:
1/2 cup extra virgin olive oil
1 1/2 tbsp vinegar
2 tbsp pomegranate paste or Granadine syrup or lemon juice
1/2 tsp lemon zest
1/2 tsp crushed red pepper
1/2 tsp oregano
1 tsp salt
Pepper
Garnish:
6-8 black olives
Mix the main ingredients in a medium sized bowl. Whisk all the salad dressing ingredients, pour all over and toss. Garnish with black olives.
