Toyga Soup
(Toyga Corbasi)
1 cup chickpeas, canned, washed and drained
1 cup water
1/4 cup spinach, frozen
1 garlic clove, mashed with salt
1 tbsp lemon juice
Salt
Pepper
Sauce:
1 cup yogurt, plain
1 cup water
1 egg yolk
2 tbsp flour, all purpose
Garnish:
2 tbsp butter
1 tbsp dry mint
Cook the chickpeas with water in a medium-size pot for about 5 minutes. Whisk the sauce ingredients in a small bowl. Take a few spoons of liquid from the pot and mix into the bowl. Then slowly pour the mixture into the pot while stirring very slowly. Cook for 15 minutes atlow heat. Then add the spinach, lemon juice, garlic, salt and pepper, then stir and turn the heat off.
Heat up the butter in a small pan. When it begins spitting, stir in the mint and pour all over the dish. Serve immediately.

Hello Binnur, this sounds really lovely. However, canned chickpeas are not available in Hungary. Can you tell me how much uncooked chickpeas I need for this recipe?

This soup is wonderful. I had to use canned chickpeas, so I decided to make this soup. We are a little picky soup eaters, but this soup is definitely good. Thanks so much for the recipe.
what does Toyga mean?
Toyga is the name of a village of the town of Çatak in the Van province in Turkey.
I make something similar, probably Armenian, but it uses fine bulgar as a thickener instead of the flour.
How long would uncooked chickpeas need to cook for in this recipe? I love chickpeas but never cook with them because they always seem to stay hard!

Dried chickpeas (or kidney beans) should be soaked overnight and boiled until they are a bit softer (easy to bite) and drained. I can't give
you the exact time for this because it depends on the variety of chickpeas. Some cook for a shorter period of time, some don't. Then, cook the softened chickpeas with water for about 5 minutes (in this recipe) then follow the recipe:)
