Spicy Biscuits
(Acılı Bisküvi)
2 cups flour
10 tbsp (1 stick (125 gr) + 2 tbsp) unsalted butter, at room temperature
3-4 tbsp kashar or mozzarella cheese, grated
2 egg whites
1/2 tsp cayenne pepper
1 tsp salt
Garnish:
2 egg yolks
Kashar or Mozzarella cheese, grated
Nigella seeds (black sesame seeds)
Cayenne pepper
Preheat the oven to 375 F (180 C).
Place the flour in a large bowl and make a hole in the middle. Add the rest of the ingredients, knead. Don't knead too much! When the dough comes together, roll it 1.0 cm thick using a roller. Cut the dough with 3.5 cm wide cookie cutters (picture). Make about 35 biscuits.
Put the parchment paper on the oven tray. Place the biscuits on it. First egg-wash the tops, then sprinkle some Nigella seeds, grated cheese or cayenne pepper all over (picture).
Place the oven tray on the middle rack. Bake for about between 20-25 minutes. You can serve Turkish Spicy Biscuits with afternoon tea.

About how long will these last in a container? I would like to make 3-4 days in advance for a party.

Thank you:) You can make them in 3 days advance. But I would suggest you to serve them in 2 days advance which will keep them crispy:)

Just wondering if it will still work using a larger cookie cutter. I just bought one with all different shapes but its probably twice the size. Will it affect cooking?

Hello binnur I believe that cheese biscuits along with spicy biscuits would be easier to find if they were arranged in cakes and cookies.By the way a superb site!

I think Nigella are black onion seeds - known as something like Kalonji. I don't know another name for black sesame seeds.
