This looks good. However, i have a question for you Binnur. Which one of your meatball recipes works with pasta? I usually like basil chease, mushrooms or anyother vegetables(not cooked with the meatballs but rather cooked separately)with my pasta. so, i hope whatever meatball recipe you gonna recommend works well with these the above ingredients :)

thank you in advance.

Hi,
You can use the recipe of Turkish Hamburger to make meatballs. You may add oregano in Kofte ingredients also.
Take care,

This sounds wonderful! May I request a recipe for potato köfte. I remember it fondly, but have never been able to find it. Possibly you have already published it? Thank you for bringing these recipes to us. Mary

Hi Mary,
Yes, I've already post it:) here is the address;
http://www.turkishcookbook.com/2006/03/potato-pate.php

On the site, below the google ads on the right, there's a search box.
So you can search on my site if "TC" is selected, it will help you to
find any recipe that I post.
Take care,

This looks great. It's interesting how you've used rice here - I've always used breadcrumbs for meatballs. I'd bet it tastes great, though.

We, also, just got back from Turkey and had the best meatballs I've ever had. They were served in a tomato base sauce with carrots & okra. They restaurant also had a similar dish with chunks of meat. do you have a recipe for this dish?

This sounds great - I haven't made this for many years. We used to call these meatballs made with rice ''porcupine meatballs'' because the way the rice ends would stick out of the meatballs ;)) We also added minced garlic, onion, green pepper and oregano to the meat for seasoning. Mmmm thanks for the wonderful recipes!

Hi Binnur,

Thanks for the wonderful site - my husband and I spent a week in Istanbul in December and had the most amazing food, including lamb kebabs with pistachio and delicious manti and gozleme. I was wondering if "short-grain rice" means Japanese-style, or risotto rice, or another kind? My mother used to make porcupine meatballs and I loved them when I was small, but one day she undercooked the rice and then never made them again!

Hi,
Thank you:) You can use Japanese-style or risotto rice. Both are almost round, have moist grains that stick together when they are cooked.
I hope you will like as much as you liked your mums porcupine meatballs:)

Hi,
The recipe that you are asking for is probably Chicken Saute with Mozzarella Cheese but I am
not sure. There is a "Chicken" section on the right side of the website, you should check it there:)
