Hi Victoria,
You shouldn't add water, the red bell pepper leaves enough water to cook the dish:) Two things may effect how much juice left. If there is a little hole on the lid of the pot which helps steam goes out should be completely closed. Or the amount of rice was too much which absorbs the juice:)

If you like you can cook Green Pepper and Potatoes with red bell peppers instead of green peppers. Each dishes have their own taste, they are not the same!

Hi Binnur, just recently discovered your site and have been enjoying this style of recipe with a bit of rice cooked with the lid tight. (This one and the spinach with rice.) Only thing is - after 20 minutes my rice is always still crunchy and I always have to cook it for another 15-20 minutes! Have you any idea what I am doing wrong?!

Hi,
I think the heat is too low to cook the rice. 2 tbsp rice are supposed to cook within 20 minutes:)
