Kafkas Soup

(Kafkas Corbasi)

Kafkas Soup
1 onion, chopped
2 tbsp butter
2 tbsp pearl barley
1 small beetroot, peeled, cut in matchsticks
2 cups beef broth
1/4 celery root (small size), peeled, cut in matchsticks, soak into water with lemon juice
4-5 baby carrots, cut in matchsticks
2-3 cabbage leaves, julienne cut
1 cup milk, warm
Salt
Pepper

2 hard boiled eggs, cut in small pieces

Saute the onion with salt in a medium sized pot. Add the barley, beetroot and beef broth. After it starts to boil, cook for about 15 more minutes at medium-low heat with the lid closed. The barley and beetroot should start to soften. Add the celery, carrots, cabbage, and cook for another 15 minutes until the barley is done on low heat. Add the warm milk, salt and pepper. Heat the soup up while stirring.

Pour into bowls and spoon the egg pieces into the soup.

2-3 servings.

Meal Ideas:
- Lamb with Garlic in the Oven, Turkish Rice Pilaf, Rose Sherbet, Turkish Ramadan Pide, Hummus and Turkish Baklava.

Sounds like a really healthy and interesting soup. I can not wait to try it. My turkish husband did not know what beetroot was but I see you use beetroot in quite few of your recipes. It is quite healthy. Maybe it depends from what region of Turkey everyone is from.

Is this really a Caucasus recipe? It looks alot like Russian Borcht Soup:) It looks really good because I like Borcht:)

Dear Denize,
As you know Caucasus is a region not the country. There are more than 50 ethnic groups living in the region like the Turkic people who are the Azeri, Noghay, Laz and Tatars etc. like my grandfather who is Tatar:)
Ukrainian Borcht Soup and Kafkas soup share some ingredients. Almost every country has Tomato Soup or Vegetable Soup . But in different versions with nearly the same ingredients:)
So, my answer would be, yes, I am sure:)

Yes you are correct! The Caucasus is a region both North and South not a country:) And I've been to both regions on my travels to Turkey. I'm American and my husband is Turkish Laz :) That is very neat that you have Tatar roots. :) I think there is more than 50 ethnic groups though. Caucasus food very delicious especially Georgian cuisine. I have a favorite called Khachpuri which is pretty close to Karadeniz Pide.

instead of barley I put potatoes and added 1tbspoon sugar,so it was almost as your and I loved it.greetings
