Lentil Borek

(Mercimek Boregi)

Lentil Borek
10 sheets Phyllo Pastry

Sauce:
2 tbsp salted butter, melted
50 ml milk, warm

Filling:
3/4 cup green lentils, soaked in water overnight, washed and drained
1 onion, chopped
2 tbsp extra virgin olive oil
2 tbsp tomato paste
1 tsp red pepper paste
1 1/2 cup beef broth
1 tsp cumin
Salt
Pepper

Top:
Sesame seeds

To cook the filling: Saute the onion with olive oil for about 3-4 minutes. Add the lentils and saute for another 4-5 minutes. Then add the rest of the filling ingredients. Cook until the lentils soften and all the water evaporates over medium-low heat, stir occasionally. Let it cool down a little bit.

Mix the sauce ingredients in a small bowl. Place the 1st sheet of Phyllo Pastry on the counter, brush some sauce all over it. Put the 2nd sheet on it, lightly brush the sauce on it. Cut them with a knife and divide in two. Put some filling on the bottom side of each sheet (picture). First fold the long sides over the filling (picture). Then close up the top (picture). And fold down each one. Brush the open end with the sauce and close it up (picture). Finish all the sheets.

Place parchment paper on an oven tray and arrange the Borek with the folded side facing down. Brush the tops with the sauce and sprinkle some sesame seeds all over.

Preheat the oven 375 F (190 C). Bake for 20 minutes until the tops take a golden colour.

You can serve Lentil Borek with Ayran or Cold Tomato Soup.

Makes 10 borek.

Hi Binnur,
I recently found your wonderful recipe blog and can't wait to try some of them soon.

But in the meantime, my mother asked me to find the recipe for a dessert called Mushebbek - does that sound familiar to you? She said it is a flour and water type of dough which is deep fried in a circular or spiral fashion.

Thank you for inspiring the international cook and baker in all of us.

Hi Betty,
Thank you:) The name of Mushebbek is not familiar to me. It is not a Turkish name:) But we have a dessert looks like what you asked for. I may post it in the future:)
Take care,

Iftar icin harika bir fikir, ellinize saglik. Acaba phyllo yerine bildigimiz Turk yufkasi olabilirmi? Acrica yag katmak lazimmi?

Merhaba Gulsevil,
Sevgilerimle,

Hello, Binnur :) I am from the Philippines and I love to try out new dishes since I have a passion for cooking. My husband was the one who introduced me to Turkish cuisine, he has many friends from the Turkish community here. I was invited to have dinner at his friend's house. I was so impressed by the delicious food! The dishes were really light and simple, yet very tasty. DO you have a recipe for this dumpling-like food we had-- glazed with yogurt and tomato paste? I don't know the name, it was some sort of ravioli with very minimal beef filling. HOpe you can help me out. Thank you and your site is really wonderful!

Hi,
Thank you:) I think what you are asking is Manti. I've already posted it which is under the Pastries section.
Take care,

Hi Binnur,
Do you have a recipe for borek (or something similar) that uses white / bechamel sauce?
Thanks!

Hi Sunaina ,
I've already posted one which is Chicken with White Sauce under the Chicken section.

On the site, below the google ads on the right, there's a search box. So you can search on my site if "TC" is selected, it will help you to find any recipe that I have posted.
Take care,
