Mushroom Cookies

(Mantar Kurabiye)

Mushroom Cookies
125 gr (125 ml = 1/2 cup = 1 stick)unsalted butter, at room temperature
1/2 cup sugar
1 egg, at room temperature
1 tsp vanilla extract
1 1/2 cups corn starch
1/2 cup plain flour, all purpose
1 tsp baking powder

4 tbsp cocoa powder

Cream the sugar with butter using a small egg whisker, then add the egg and vanilla extract, whisk. Add the corn starch, then mix with your hand. Gradually add the flour and baking powder, knead. You will have a very soft dough. Let stand for 5 minutes. Make chestnut sized balls with your hands. Place parchment paper on an oven tray and arrange them on it.

Place cocoa in a small bowl and pour 1 tbsp water in another small bowl. Wash and dry a glass soda bottle. Soak the rim of the bottle into the water, then dust it with cocoa powder. Press the rim of the bottle lightly on the dough (picture). Finish them all. Wipe the rim of the bottle with tissue paper every 3-4 times.

Preheat the oven to 375 F (190 C) and bake for about 25 minutes. Arrange them on the wire rack so they cool down.

Binnur abla, when you said 125 gr butter, do you round it up and use 1 stick in your recipes or do you use exactly 125 gr (more than 1 stick)?

I use 1 stick unsalted butter for the recipe. I add more information about it:)

Hi Binnur,
I made these cookies and susame rings for a pothluck and people liked them. Expecially they loved your mushroom cookies. Some people asked me its recipe and I gave them your web-site adress. I am so happy because first of all I hesitated whether they could like these cookies but my husbant encouraged me. Maybe he missed these cookies:-) Some people asked me whether there are peanut butter into mushroom cookies or not.Thank you so much for nice recipes.

Merhaba Binnur,

I tried this recipe but my cookies did not take the shape of mushrooms! They simply flattened out to look like regular sugar cookies : ( I even made sure to include the cornflour. Do you have any recommendations for me? I also want to thank you for providing so many great recipes, everything else I've tried has turned out perfectly. My Turkish husband is so proud of me when I'm able to cook something traditional for him! Your website is a great resource, tesekkurler!

Merhaba Katherine,
Thank you:) The key ingredients is the corn starch. So I made a little search for you and found out, in Britain it is called cornflour which refers to a ground cornmeal product. Corn starch or corn flour is not cornmeal which you used for the Mushroom Cookies:) I think you live in England!
