Chicken Saute with Mozzarella Cheese

(Kasarli Tavuk)

Chicken Saute with Mozzarella Cheese
3 pieces chicken breast, cut in cubes
2 tsp extra virgin olive oil
1 tbsp butter
1 medium onion, chopped
1-2 garlic cloves, minced
4-5 mushrooms, brushed, cut in 2 or 4
1 cubanelle pepper, cut in cubes
1 large + 1 medium tomato, peeled, cut in cubes
Salt
Pepper
1 tsp oregano

Garnish:
1/4 cup kashar cheese or Mozzarella
1/2 tsp Turkish red pepper powder

In a medium sized pan, saute the onion with butter and olive oil. Add the garlic and when the smell of the garlic comes out, add the chicken. Cook the chicken until the colour changes. Add the mushrooms, tomatoes, cubanelle pepper, salt and pepper. Simmer for about 15 minutes with the lid covered. Turn the heat off and sprinkle some oregano all over.

Transfer to the oven proof dish. Sprinkle the shredded cheese and red pepper on top. Preheat the oven to 400 F (200 C) and bake until the cheese melts. Serve with Turkish Pilaf.

2 servings.

I just made this dish last night, and it was wonderful! This is one of my new favorite dishes and I think it will be a staple in our household. My favorite thing about it -- other than the taste, of course -- is that living in Turkey, the ingredients were so inexpensive. So much of what I try to make here, because I try to make American/Italian food, ends up being really pricey because of all the imported products I have to buy. But this was perfect for my wallet! Thanks!

Hi Binnur

I am an avid fan of your recipes and make them at least once or twice a week.

Excuse my ignorance but when you say 'brushed mushrooms' do you mean brush them oil?

Thank you and keep up the good work

Pamela

Hi Pamela ,
I clean the mushrooms with a brush:) If you like you can also use a piece of cloth.

Hey Binnur! Charlotte here from Wisconsin USA, I'm married to a Turkish man and have been raiding your cook book the last week to make dishes for him because he claims my traditional European cooking is too bland for his pallet. Thank you so much for taking the time to make these recipes readily available on the net, especially choosing easier ones with spices Americans can get a hold of! You help me to be a better kadin to my koja, thank you!

Hi Binnur,

Thank you for your wonderful and delicious recipes, made available to all of us in a precise, but simple and elegant way.

Some of your dishes have really made my student times in the US better, have helped me promote Turkish food in my home country, Spain, and are now contributing to the "conquest" of my nişanlı's heart in Turkey as well ;-)

Ellinize sağlık!!

Sonia
