Cucumber with Walnuts

(Cevizli Salatalik)

Cucumber with Walnuts
2 small cucumbers
1/2 cup walnuts, crumbled
1 garlic clove, mashed with salt
1 tbsp juice of lemon
1/2 tsp crushed red pepper (red pepper flakes)
Pinch of salt

Grate the cucumbers, squeeze a little bit to remove access water with your hand. Don't squeeze too much! Toss them with walnuts, garlic, lemon juice, crushed pepper and salt. Serve it chilled.

Thank you for that recipe! My favourite summer snack is baby cucumber with salted almonds, I bet this salad will be delicious.

There's no olive oil in this recipe? It sounds delicious, it just seems like most of the salad recipes call for olive oil.

Hi,
I've posted the original recipe which belongs to Black Sea region. The recipe has 1/2 cup crumbled walnuts in it. As you know, the walnuts contain oil in it. So there is no need to add extra oil in the salad. But, if you like more oily, sure, feel free to add more oil:)

My garden is bursting with cucumbers now and when I saw this I made it right away. Very easy and very delicious. I did add a drizzle of olive oil and topped the salad with crumbled feta. Will make again.
