Çökertme Kebap / Bodrum Kebap
(Bodrum - Muğla)
250 g beef or veal strips, I cut the strips in 2 or 3
Marinade:
1/2 cup milk
4 tbsp olive oil
1 tsp cumin
1/2 tsp paprika
Salt
2 medium sized white potatoes, cut in julien
1 cup sunflower oil
2 cubanelle peppers
6-8 cherry tomatoes
Yogurt Sauce:
1/2 cup yogurt, room temperature
1-2 garlic cloves, mashed with salt
First, fill the half of the medium-size plastic bowl with water and add 1 tbsp salt. Soak the potato slices in it for about 20 minutes. Heat up the liquid oil in a frying pan. Drain the potatoes, but don't rinse them, just dry with a paper towel. When the oil is hot enough, fry the potatoes until golden brown. Afterwards, place on a paper towel to absorb any extra oil.
Marinate the beef strips for about 4 hours or overnight in the fridge in a closed container. Bring the beef to room temperature 10 minutes before cooking. Heat up the Teflon pan. Then, place the beef strips in it. Cook until the beef is tender. Season the beef with salt and pepper, turn the heat off.
Meanwhile, saute the peppers and tomatoes with butter for about 5-6 minutes in the pan.
Place the fried potatoes on a serving dish. Arrange the cooked beef on them. Garnish with peppers and tomatoes. Place the Yogurt Sauce on top and serve while still warm.

1. making (something) collapse.
2. a fishing net that is lowered flat into the water and drawn up by its corners when it is full of fish.
Well, either meaning fits well with your dish presentation!

evet marine yaptim...saadece 3 saatim kalmisti fakat yinede cok lezzetli oldu. Yalniz ben menuyu biraz degistirdim:
Ben Cokertmeyi yaparken kizim sizin sayfanizdaki "Ramazan Pidesini" yapti (once tarifin aynisini yani 2 pidelik) fakat pistikten sonra oyle guzeldiki, hemen usenmeden tekrar (bu sefer iki misli hamur mayalayip) 4 tane daha pisirdi.. aman tanrim..O gun mutfakta cok zevkli saatler gecirdik kizim ile birlikte, ve biz o aksam .. Cokertme, bol Coban salatasi veeee Pide yedik... mmmhhh
saade fakat hem lezzetli vede o kadar zevkli degisik bir yemek oldu.

I am so making this. This is like the doner-kebabs I grew up eating in Azerbaijan but don't have in Wisconsin. I actually used to throw dinner parties and serve something like this stuffed in homemade pita bread, except I made meat patties with venison/beef, but I would much rather have strips like yours! I am making this next time I am making supper.
Had this for the first time actually in the town of Cokertme at a restaurant along the bay. We had docked our sailboat there and spent the evening. Quite lovely. Rather than julienne the potatoes, the restaurant cut them into "shoestring" potatoes making a nice nest for everything else to settle into.
Couldn't help but sing, "Cokertme'den ciktim da Halil'im..."
Hi Binnur I've recently returned from side where I had some wonderful dishes . Could you please send me the recipe for the famous ottermans kebab I've searched all over for the recipe but can't find it would really appreciate it if you could? Also does your book contain all these recipes as I would live to purchase a copy thank you net

The sales of my book started on December 13, 2007. There are 115 English recipes (already posted on the website) in the book.They were all posted from the beginning to the end of 2007.
The recipes for the last 4 years are not included in this book.
