Hoshmerim
(Hoşmerim/Peynir Helvası - Ottoman Kitchen - Balıkesir)
500 gr ricotta cheese
2 egg yolk
1 tbsp flour, all purpose
2 tbsp semolina - I used Turkish semolina
2/3 cup sugar - first add 1/2 cup sugar, if you want more you can go up to a total of 2/3 cup of sugar
1 tbsp Thick Turkish Cream or English Devon Cream or very thick cream or %40 Double Cream-(President's Choice-Loblaws in Toronto)
1/2 tsp vanilla extract
Mix the egg yolks with ricotta cheese and place the mixture in a large pan. Cook at low heat until its juice is evaporated for about an hour. Stir occasionally.
Add the flour, semolina, sugar, vanilla extract, cream into the cheese. Cook until the sugar dissolves while stirring occasionally with low-medium heat. Turn the heat off. Cover it with the lid. Let it rest for about 10 minutes. Then, place in separate small bowls. Serve Hoşmerim while still warm.
4 servings.

Hmm, this pudding sounds really delicious Binnur!
Could you please explain what "%40 Double Cream President's Choice" is similar to? I'm not familiar with it; I googled it, and can't figure it out. What would be a good substitute? Thanks
I have to try this, I love puddings and it sounds very easy and pretty quick.
Hi,
I put some options for the thick cream in the recipe:)
Thank you, thank you, thank you Binnur for Hoshmerim recipe. You have brought my childhood days at Gelibolu back.

Hi Binnur,
A few years ago when we were in Turkiye we visited my husbands Aunty who lives in Bolu Mengen and she prepared something called Hosmenim. She used polenta it was similar to the way italians prepare it. she used butter and milk.
would you have a recipe for this?
thanks
Sidika
Hi Sidika,
I've already posted a Hosmerim recipe. You can use the recipe to make your own Hosmerim:)
Bizim evde kimse sevmese de ben çok severim. Ama hazır olanları bana çok tatlı gelir. Tarif de çok kolaymış. Kendim için hemen deneyeceğim. Paylaşım için teşekkürler...

I had this dessert in Turkey and it was my favorite!! I asked and the lady told me it had a small amount of honey and the cheese felt like rice (maybe cottage cheese or was it rice?) do you know of any variation that includes the ingredients I mention?
Thank you, Mariv
Hi Mariv,
Probably it was cheese:)
I think hosmerim would be easier to find from 'dairy desserts' section. In my country it's called the cooked cheesecake :) and we put it on biscuits to form a cake :)
You are right, it should be under the 'dairy desserts' section:) Thank you!
