Turkish Onion Soup
(Sogan Corbasi)
1 large white onion, cut into 1/4 inch slices, separate the onion slices into rings
1 garlic clove, chopped
2 tbsp + 1 tsp butter
3 tbsp flour, all purpose
1 cup whole milk
1 cup white wine or water
1 cup vegetable broth
Salt
Pepper
Garnish:
Cinnamon
In a medium pot, melt the butter at low-medium heat. Then add the garlic, salt and pepper. Saute until the smell of the garlic comes out.
Add the flour, stir. Add the onion rings and slowly pour milk in it while stirring constantly. Now add the wine and vegetable broth, stir slowly. Cook until the onions are tender at low heat. Stir occasionally.
Immediately pour into individual bowls. Sprinkle some cinnamon over the tops and serve.

WOW that was great Chok Guzelle! Excuse my spelling I'm sure. So easy and the cinnamon really pulled this together!
I dont think the turkish people use wine in thier cooking !! I`m shocked for the recipe .
What's a replacement for the wine? We don't drink alcohol. I'm surprised to see it in Turkish recipes.

I think there are some wrong impressions about the Turks.
Türkiye is a secular country with a Muslim majority since 1924 (for 89 years) which keeps the religion and State separate. You can consume alcohol or you can wear bikinis on the beach. You also do not have to wear a headscarf. It is not like in most of the Arab countries.
Also, you might like to know that Raki (Lion's Milk) is the popular national drink in Türkiye.
So, you can replace the wine with water. It's a personal choice and if you don't want to use wine you can replace it with whatever you want:)
