Ozbek Pilaf

(Ozbek Pilavi)

Ozbek Pilaf
1 cup long-grain rice, rinsed
350 gr beef, cut in cubes
2 tbsp butter
1 onion, chopped
1-2 garlic cloves, minced
1/2 cup carrot, cut in small pieces
1+2/3 cup hot beef broth
1 tsp salt
Pepper

Saute the beef with butter in a medium pot for about 10 minutes, stir occasionally. Take out the beefs with perforated spoon. Put them on a plate. Toss the onion into the pot and saute for about 3-4 for minutes. Add the rice, garlic, carrot and salt, continue to saute for about 3-4 more minutes. Add the beef and beef broth in it. Cover, turn the heat down to the low. Cook until all the water evaporated. Season with black pepper, toss.

Let the Ozbek Pilaf stand for about 5 minutes before serving.

I made this tonight, only with ground beef because that is what I had on hand. Very simple and very good d but I think I want to try with the cubed beef.

Is beef popular in Turkey? I haven't spent much time in the Middle East and I just assumed lamb was preferred.

I am actually looking for a Turkish recipe, but I don't have the name of the dish. It is basically a zucchini stew (tomato based) with ground meat. What I love is the seasoning, and it must be either dill or fennel. Do you have any idea what I am talking about?

I think the traditional ozbek pilav is cooked wiht lamb and lamb is cooked with it's own fat. It results very juicy
(of course, it was not meant not for those who are trying to keep to low fat diet, but in the villages for example, it's simply delicious. do you have a recipe for a traditional one?

Hi,
You can always cook it with lamb instead of beef. I mostly use lamb in my dishes but that time I choose beef:)
This is the only Ozbek Pilav recipe that I have:)

Hi,

I guess you can make the Ozbek Pilav with any meat you like, the last time I ate it, it was with chicken and it was delicious. We could not stop before it all got finished.
