Potato Twister
(Patatesli Gul Boregi)
4 sheets Phyllo Pastry
2 tbsp extra virgin olive oil
Filling:
2 medium sized potatoes, cooked, peeled, mashed
100 gr Ricotta or feta cheese, crumbled
2-3 tbsp parsley or dill, chopped
1/4 tsp paprika, powder
1 pinch crushed pepper
Glaze:
1 egg yolk
1 tsp Nigella seeds
Place the 1st sheet of Phyllo Pastry on the counter and position them vertically, brush some olive oil all over it. Put the 2nd sheet on it. Put half of the filling on the bottom side of the sheet. Leave some space around all ends.
Then roll up each one, do not squeeze! Brush with the egg white the open end and close it up. Then twist the strip gently as seen in the picture. Brush the end with egg white to close. Finish all the sheets.
Place parchment paper on an oven tray and arrange the Potato Twisters on it. Brush the tops with egg yolk and sprinkle some Nigella seeds over the tops.
Preheat the oven to 375 F (190 C). Bake for about 25 minutes until the tops take a golden colour.
Serve as an appetizer or as a supper treat with Turkish Tea.

These look really great. I love borek in general. Certainly I'm going to be trying these, especially since I just discovered a wonderful little Turkish grocery store near my home. They sell dough, cheeses, yogurt and more.

Since I live here in Turkey 6 months a year, I love your recepies and tried out a lot of them. (congratulations, they all were very nice). Do you think I can before baking freeze them in?
A big belgium fan fom you, Flora.(PS: also in this recepie I see you use evt. dill. I have a big problem in where I can use this herb, because we only use it by fishrecepies, but here on the market it is as important as parsley. So please what does it doe in other combinations?)

Dear Binnur, can we expect more twister recipies? I would like to make a cheese twister but Im not sure if I should brush it with yoghurt or only an egg before baking, Im not succesful in making boreks they always turn out dry :(? I love the way these boreks look. Greets

There are a few reasons for it; Borek may need more sauce, or the heat of
the oven is too high, or it is over baked:) You can brush the top of the borek with only eggs or egg yolk or mixture of egg&milk&oil or butter, or mixture of egg&yogurt&oil or butter, etc.
