Long Green Bean Salad

(Taze Borulce Salatasi - Aegean Region)

Long Bean Salad
Bunch of long beans or Chinese beans, wash, trim both ends

Dressing:
Extra virgin olive oil
Lemon juice
Salt
Pepper

Bring the water to boil. Add the beans and boil for about 15 minutes, drain. Whisk all the dressing ingredients. Toss it with the beans while they are still warm.

hi.my name is Sofia and i m greek.i really like your blog ,me and my husband adore turkish kitchen.as for the previous recipe with the long beans ,i suggest you to try one cretan variety .while you are boiling the beans add in the water a whole unpeeled tomato.after the boiling is over, serve the beans and on top pour the chopped tomato -after you removed the skin-add oil salt and a little pepper and vinegar if you want and enjoy with with fried potatoes!!!!!

Hi Binnur,

I love borulce and we make it all the time during the summer months in Turkey but I don't know where I can find them in the U.S.? I am not sure if they would be available at the local supermarkets?

A healthy salad. Do you also shave both sides like you would for flat beans or is it just enough to trim the ends?

The long beans don't need to be shaved on the sides, just trim the ends:)
