Zucchini with Tomatoes

(Çitme - Konya)

Zucchini with Tomato
1 zucchini, cut the zucchini vertically in half, then slice them up
5-6 tbsp extra virgin olive oil
1 small onion, sliced
1 small cubanelle pepper
1 large tomato, peeled, diced
Salt
Pepper

Place the onion in a medium-sized pot. Arrange the cubanelle pepper and tomato on it. Place the zucchini over the top. Drizzle them with olive oil. Season with salt and pepper. Cover and cook at medium-low heat until the zucchinis are tender. Do not over cook!

2 servings.

simple and bautiful, cheers, i always made them with tomato paste, this is interesting to me,seems like a hot salad:)

That was delicious, quick and healthy! My kind of recipe. I would probably halve the oil next time because the tomato added enough liquid. I was also shocked that I ate the entire recipe myself for lunch. Thank you!
