Apple-Walnut Cake
(Elmali-Cevizli Kek)
1. group:
3 extra large eggs, room temperature
1 cup sugar
1/4 cup milk, room temperature
1/4 cup extra virgin olive oil
1 zest of lemon
1 tsp vanilla extract
2.group:
1 1/4 cups flour, all purpose
1 tsp baking powder
1/2 tsp cinnamon
1 1/2 red apple, peeled, cored, cut in small cubes, floured
1/2 cup walnuts, crumbled
You can use any kind of Cake mold, I used one with a hole in the center, oiled, floured
Beat the eggs with sugar until creamy using a mixer in a large bowl. It should be double or even more its size:) Add the rest of the 1.group ingredients, mix. Add the 2.group ingredients, mix. Add the apples and walnuts in it, mix. Then pour the batter into the mold.
Preheat the oven to 350 F (180 C). Place the mold on the middle rack. Bake it until toothpick comes out clean. It takes app. 45 minutes. But do not forget! baking time may change from one oven to another:) Wait for 30 minutes, then place the cake on the wire rack to cool it down.

Hi Binnur, I wonder if regular canola oil can be used in place of olive oil for this recipe? Sounds so easy to make, look forward to it. Thanks so much. Hosca kalin, Sedef
HI Sedef,
I've never used canola oil to bake any kind of cake. I always use butter or extra virgin olive oil. Olive oil makes the cake very light. For the canola oil; why not, use it:)
This cake sounds so laziz. I can't wait to try it!
Thank you for all your wonderful recipies, they always turn out tasting perfect, maşAllah.
My husband is from Trabzon, so I was wondering if you can tell me of any special dishes from karadeniz region?
Cok teşekkur ederim!
Merhaba Mrs. Kuloglu,
Thank you:)
Almost all the recipes that belong to the Black Sea Region are similar. They have different names with minor differences. So you can check the recipes for the Black Sea Region that I have posted:)
I am going to post more recipes that belong to Karadeniz region in the future:)
I made this cake and it was great. Another wonderful recipe. Thanks Binnur
Hi Binnur. I made this cake and the taste was good, however, i could not remove it out of the mold ( i did oil and dust the mold with flour) what should i do to prevent the cake from sticking to the mold? should I spray the mold with some kind of a spray?
i do not have this sticking issue when i make the other cakes you have posted such as the orange walnut cake.
please help :) thanks a lot.
Hi Zainab,

Hi Binnur,
This cake is now a main recipe for us, it's light and delicious. I tried it with olive oil and then again with canola oil. I also added some ground flax seeds. I really love it. Thank you so much for generously sharing your recipes with your fans!

Hi Binnur,
I made this cake but it was a little dense. I'm not sure why. I followed the recipe exactly as is. Any ideas?Thank you,Zeyneb
Hi Zeyneb:)
If you have used the same ingredients and followed the recipe it shouldn't be dense.
The only thing I have in mind is that you may have used different sizes of the apples and eggs:)
This cake Im going to do for Christmas, I like walnuts and apples so this recipe suits my taste :)
Hi Binnur!
