Butternut Squash in Olive Oil
(Zeytinyagli Balkabagi Basti)
~200 gr butternut squash, peeled, cut in a little bit larger than bite-size
1 onion, sliced
1/4 cup extra virgin olive oil
2 tbsp rice, rinsed
1/4 cup water
1 tsp lemon juice
Salt
Pepper
Garnish:
1 tbsp dill, chopped
Saute the onion with olive oil. Add the rest of the ingredients. over and cook until the rice is tender over low heat. Let it cool down first. Then place on a serving dish. Sprinkle some dill over the top.
Serve the Butternut Squash in Olive Oil at room temperature or chilled.

thank you..ive had the leeks and cabbage cooked this way with rice and they are so delicious!!..but never knew of squash till today..is the squash one as common as well? btw the your web site is amazing..i also tried the biber asi and that was amazing. i did add abit of garlic too it though.miriam

ingredients as available in their their region. So, there are more squash recipes and I am going to post them in the future:)

Our traditional meal servings are; We arrange olive oil dish like
Butternut Squash in Olive oil, salad, meze (appetizer), any kind of pastry like borek on the table. And we start with the soup, then, main course dish with mostly pilaf, cacik, etc. We love to drink ayran (yogurt drink) with our meal, then dessert comes with Turkish Coffee or Turkish Tea:)

Hi, i live in Turkey and we have lots of pumpkin growing in our garden which i do not know what to do with. This recipe looks great would it work if i replace the squash with pumpkin? many thanks selena.
