Tomato Soup with Orzo

(Domatesli Arpa Sehriye Corbasi)

Tomato Soup with Orzo
2 large tomatoes, grated (cut a piece of skin at the bottom of the tomato and start to grate from there)
3 tbsp crushed tomatoes, canned
1 1/2 tbsp butter
1/4 cup orzo
2 cups chicken broth
Salt
Pepper
~
2 tbsp heavy cream

Garnish:
Parsley, chopped
Mozzarella cheese, grated

Saute the grated tomato, crushed tomatoes with butter at low-medium heat for about 4-5 minutes in a medium sized pot. Add the rest of the ingredients. Cover and cook until the orzo in tender at medium-low heat. If necessary, add a little more chicken broth. Add the cream,stir. Simmer for one more minute, turn the heat off.

Immediately pour into individual bowls. Garnish with parsley and Mozzarella cheese and serve.

*Before serve always check the taste, soup may need salt and pepper:)

2 servings.

Hi Binnur abla, bu corbayi bu aksam yaptim ve nefis oldu. Sizin siteten cok tarifler denedim ve hersey cok guzel. Ellerinize saglik koydugunuz icin. Selamlar Virginiadan

Great soup, I have some questions though:), 1)Are there any Turkish soups with arpa(barley) but not arpa sehriye? I was looking for some recipe but all that I found are with arpa sehriye and 2)Im not clear what that means?...is this sehriye made from barley:)? if anyone answered I'd be so grateful.greets

Hi,
1) There is a google search box on the right site of my blog, just
below the google ads. So you can search "barley" and if "TC" is selected, it will help you find the recipes you are look for.
2) Orzo means "arpa sehriye" in Turkish which is not arpa (barley).
Orzo is pasta shaped like pearls of barley that's why Turks call it orzo, arpa because of its shape.
3) Here is your soup:) You can use barley instead of wheat.

Can I use yogurt instead of cream for this soup? I am not sure if it would work the same.
