Tomato with Eggs

(Domatesli Yumurta)

Tomato with Eggs
3-4 medium tomatoes, peeled, discard the seeds, diced
3-4 tbsp extra virgin olive oil
1 garlic clove, mashed with salt
1/4 cup feta cheese, crumbled
2 eggs
Parsley, chopped
Pepper flakes
Salt
Pepper

Heat the olive oil and garlic in a small pan. When the smell of garlic comes out add the tomatoes. Cook the tomatoes for about 3-4 minutes at medium-low heat. Add the feta cheese, stir. Then, make room and crack the eggs. When the egg white is cooked, take it from the heat. Do not over cook the eggs yolk!

Drizzle a little bit olive oil over the top. Season with pepper flaks, salt and pepper. Sprinkle some parsley over the top. Serve immediately as a breakfast or a light meal with freshly baked Turkish bread.

Can I substitute Feta Cheese with Kashar?

Hi,
Tomato has sugar in it and when you cook it, all the sweetness comes out. So the feta cheese breaks this sugar with its saltiness. Also adding the pepper flakes into the dish has the same effect. You can replace feta cheese with the cheese that has salt in it like tulum or old kashar or even parmesan.
I wouldn't mix old kashar cheese with tomato. I would sprinkle handful kashar all over the top after the eggs are cooked:)

Hi Binnur, I have eaten this on many occasions, usually with sujuk. How would i cook with Sujuk? would i add while frying the garlic?
