Apple Cookie Rolls
(Elmali Kurabiye)
Dough:
250ml unsalted butter, at room temperature
1 tbsp Turkish yogurt, plain
Zest of half lemon
1/3 cup powdered sugar
1 tsp vanilla extract
2 cups flour, all purpose
1/2 tsp baking powder
Filling:
3 Granny Smith apples, peeled, grated
1/2 cup sugar
1 tsp cinnamon
1/4 cup walnuts or hazelnuts, crumbled
To prepare the filling; cook the apple and sugar until all water evaporates. Turn the heat off. Then add the cinnamon and the nuts, stir well. Let it cool down.
To make the dough; knead all the ingredients in a large bowl. Make sure everything is well mixed and divide it into 10 or 12 pieces. Make chestnut sized balls with your hands. Then flat them in your palm. Place one tablespoon of filling on top of every piece of dough and close the opposing sides by folding. Arrange them on the oven tray covered with parchment paper.
Preheat the oven to 375 F (190 C) and bake for about 25 minutes. Immediately sprinkle some powdered sugar on top using a small strainer after you take them out of the oven.
Makes 10-12 Apple Cookie Rolls.

Hi, just a little confused where it first says in recipe to divide into 12 balls & then the roll count at the end is 18-20? Am I missing something?

When it says 250ml of butter, do u have to melt the butter as ml is for liquids? Otherwise how can you measure butter in mls?

250 ml butter is equal to 1 cup or 16 tbsp. There are 3 different measurements on the package of the butter which are are "cup - tbsp - ml". None of the measurements are in grams so that's why it is in ml.
The recipe says the butter will be at room temperature, not in liquid:)
Love your site and have tried many recipes for my husband here in Turkey.
I struggle though, when the measument for butter is in mls. I tried this recipe at the weekend and used 250grams of butter. While the kurabiye were delicious, they were very rich, so I guess I used too much butter. Is there any way to convert mls to grams?

I made this over the weekend with slight changes.
1) I added 1 tbs apple cider vinegar, this is supposed to make cookies crisp
2) I substituted 1/3 cup of the flour with corn starch, since I like very tender cookies
I grated 3 regular apples (I think I had Fuji at home) and cooked them until they were caramelized. Because I wanted the cookies to have tons of filling 3 apples were not enough, so I would recommend 5 if you like the apple filling. I did not have hazelnuts so I added slivered almonds, but I think best would be walnuts.
I used 2 sticks of butter, they were frozen so microwaved them in 15 second intervals until they warmed up to room temperature. I think it was A LOT of butter, so next time I will try with 1.5 sticks and see how it goes.
I put everything in a food processor until it formed a sticky, very sticky, dough. Then I transferred the dough into plastic wrap and put it in the fridge for a while since it was too soft.
I made quite large cookies and filled them with apple filing. The dough got quite mushy after a while, so I suggest refrigerating it at one point. I was able to make 12+ cookies until I ran out of filing, so froze the rest of the dough for future use.
I baked about 20 mins and dusted with powdered sugar.
Everyone loved the cookies, they were very tender and totally delicious.
I will try with less butter and update.

Hi,
I reduced the butter to 1.5 sticks and reduced the sugar to 1/4 cup, I had tons of apples so did not want it to be too sweet, and the results were great.
This time I made the dough and filling day in advance, kept in the fridge and baked the next day.
Next morning I realized that I forgot to add baking powder, gosh I can never follow a recipe, so I put the dough back into the food processor in smaller batches, sprinkled baking powder on it and processed a bit, cookies came out great, so if you are forgetful like I am you can still make it work.
I want to try preparing and freezing them in smaller batches since cookies get soft if they are not finished in 2 days. They still taste good though:)
I will let you know how freezing goes.
