Green Lentil Salad

(Yesil Mercimek Piyazi)

<br />Green Lentil Salad
1/3 cup green lentils, soak in water overnight, washed and drained
2 green onions, sliced
1 tomato, peeled, diced
2 tbsp parsley, chopped
5-6 tbsp extra virgin olive oil
2 tbsp pomegranate paste
1 tsp cumin
1/2 tsp red pepper, powdered (paprika)
Salt
Pepper
1/4 cup walnuts, crumbled

Cook the lentils until they are tender, drain. Do not overcook! Add the rest of the ingredients, stir. Cover the bowl. Let it rest for about 30 minutes in the refrigerator before serving.

That looks so delicious Binnur! It would be so good with grilled chicken or fish. Is the red pepper powder paprika?
